De Lausanne \u00e0 Gen\u00e8ve, en passant par Vevey, les h\u00f4tels tiennent leur rang.<\/span><br \/><span style=\"font-style: italic;\">Pierre Thomas<\/span><br \/>Seul oubli, l\u2019H\u00f4tel de la Prairie, \u00e0 Yverdon-les-Bains, que l\u2019entreprenant confiseur Philippe Guignard reprend ces jours: pr\u00e9sent dans le guide 2007, il dispara\u00eet de l\u2019\u00e9dition 2008, dont il existe une \u00e9dition en fran\u00e7ais, ax\u00e9e sur la Suisse romande (<span style=\"font-style: italic;\">240 pages, \u00e9dit\u00e9 par Ringier Romandie<\/span>). Pourtant, en cas de transition, la note attribu\u00e9e peut \u00eatre mise entre parenth\u00e8ses, ainsi pour l\u2019Auberge du Raisin, dont le chef Adolfo Blockbergen est d\u00e9c\u00e9d\u00e9. Cette adresse de Cully est g\u00e9r\u00e9e par Jean-Jacques Gauer, le patron du Lausanne-Palace, qui a de quoi \u00eatre satisfait&nbsp;: non seulement son chef, <span style=\"font-weight: bold;\">Edgard Bovier, d\u00e9croche une troisi\u00e8me toque (et 17 points sur 20)<\/span>, qui en fait sans conteste la meilleure table lausannoise, mais la Grappe d\u2019Or, version italienne, o\u00f9 l\u2019h\u00f4telier a des int\u00e9r\u00eats, obtient une toque (\u00e0 13 points). De son c\u00f4t\u00e9, malgr\u00e9 un changement de chef, la Rotonde du Beau-Rivage Palace maintient ses deux toques et 15 points. A Vevey, si les Trois-Couronnes (\u00e9galement&nbsp; dans le giron Gauer) restent \u00e0 13 points, on note l\u2019arriv\u00e9e de <span style=\"font-weight: bold;\">l\u2019H\u00f4tel du Lac, d\u2019embl\u00e9e \u00e0 14 points<\/span> gr\u00e2ce au talent de Fabrice Taulier.<br \/>Dans le Pays de Vaud, l<span style=\"font-weight: bold;\">e Restaurant de La Gare, \u00e0 Lucens, et l\u2019Auberge de l\u2019Onde, \u00e0 Saint-Saphorin, la Fleur-de-Lys, \u00e0 Fribourg et La Croix-Blanche \u00e0 Villarepos (FR), conqui\u00e8rent leur deuxi\u00e8me toque (\u00e0 15 points)<\/span>. Coup de sac \u00e0 Gen\u00e8ve, o\u00f9 des chefs chevronn\u00e9s perdent leur troisi\u00e8me toque (et descendent \u00e0 16 points): le duo Dupont-Byrne \u00e0 l\u2019Auberge du Lion d\u2019Or \u00e0 Cologny et Richard Cressac, \u00e0 La Chaumi\u00e8re \u00e0 Troinex, tandis que le <span style=\"font-weight: bold;\">Parc des Eaux-Vives passe \u00e0 trois toques (17\/20).<\/span> A Gen\u00e8ve encore, le restaurant de l\u2019H\u00f4tel Bristol (14 points) entre dans le guide, comme un deuxi\u00e8me restaurant, chinois, de l\u2019H\u00f4tel La R\u00e9serve \u00e0 Bellevue. <br \/><span style=\"font-weight: bold;\">Coup de chapeau aux solitaires<\/span><br \/>Mais GaultMillau salue aussi la d\u00e9marche de chefs qui travaillent seuls dans leur petit coin de pays: ainsi S\u00e9bastien Rittner, \u00e0 la Table des Saveurs, \u00e0 Caux, \u00abd\u00e9couverte romande de l\u2019ann\u00e9e\u00bb, et Patrick Gazeau aux Jardins de la Tour \u00e0 Rossini\u00e8re, tous deux \u00e0 14 points. La m\u00eame note est attribu\u00e9e \u00e0 deux cuisiniers qui ont \u00abr\u00e9duit la voilure\u00bb, dans leur gastro transform\u00e9 en brasserie, le Gru\u00e9rien Marcel Th\u00fcrler \u00e0 Bulle-La Tour et le Valaisan Olivier Vallotton \u00e0 l\u2019Olivier, \u00e0 Martigny. <br \/>Parmi les nouveaux arrivants, on signalera encore l\u2019Auberge communale d\u2019Aclens (VD), Les Colombettes sur Vuadens (FR), la Casa Pagni et la Brasserie de l\u2019H\u00f4tel-de-Ville, deux nouvelles adresses chaux-de-fonni\u00e8res. Et dans les pertes de points, le Trianon de l\u2019h\u00f4tel Mirador Kempinski, au Mont-P\u00e8lerin, qui n\u2019a pas retrouv\u00e9 son \u00e9lan apr\u00e8s le d\u00e9part de Peter Knogl (qui garde les 17 points et trois toques de l\u2019H\u00f4tel des Trois-Rois \u00e0 B\u00e2le) et l\u2019H\u00f4tel Cailler, \u00e0 Charmey (FR), qui perd sa toque (12 points au lieu de 13).
