De ses hauteurs, il est descendu \u00e0 L\u2019Onde, \u00e0 Saint-Saphorin. On croyait qu\u2019il avait d\u00e9j\u00e0 \u00e9t\u00e9 nomm\u00e9 <em>\u00absommelier de l\u2019ann\u00e9e\u00bb<\/em>\u00a0: eh bien non, c\u2019est pour le mill\u00e9sime 2015 du guide, et surtout parce qu\u2019il a s\u00e9lectionn\u00e9 les <strong><a title=\"Les 99 chasselas \u00e0 boire avant de mourir\" href=\"http:\/\/www.thomasvino.ch\/?p=12034\"><em>\u00ab99 chasselas \u00e0 boire avant de mourir\u00bb<\/em><\/a>.<\/strong><\/p>\n<p>Dans les promotions de l\u2019ann\u00e9e, celle de <strong>J\u00e9r\u00f4me Manifacier<\/strong>, \u00e0 Gen\u00e8ve, consacre aussi un chef au service d\u2019un h\u00f4tel, celui de La Paix : l\u2019\u00e9l\u00e8ve de <strong>G\u00e9rard Rabaey<\/strong> vaut d\u00e9sormais 17 points sur 20 \u2014 <strong><a title=\"J\u00e9r\u00f4me Manifacier, Vertig'o, Gen\u00e8ve\" href=\"http:\/\/www.thomasvino.ch\/?p=10653\">on \u00e9tait all\u00e9 le trouver l\u2019an pass\u00e9<\/a><\/strong>\u2026 (<em>en photo ci-dessous, \u00a9Markus Gyger)<\/em>\u00a0 Autre chouchou av\u00e9r\u00e9 de <em>GaultMillau<\/em>, l\u2019h\u00f4tel Eden Roc, \u00e0 Ascona, o\u00f9 <strong>Salvatore Frequente<\/strong> fait souffler un vent sicilien sur le restaurant La Brezza, class\u00e9 17, comme <strong>Christian Geissler<\/strong>, descendu de Zermatt au Kunsthof de Uznach, au bout saint-gallois du lac de Zurich. Et 70 adresses sont nouvelles. Rapidement, le tour de la Suisse romande, selon le dossier de presse\u00a0:<\/p>\n<p><em><strong>Gen\u00e8ve\u00a0:<\/strong><\/em> <strong>J\u00e9r\u00f4me Manifacier<\/strong>, est le \u00abpromu de l\u2019ann\u00e9e\u00bb en Suisse romande (17\/20), et deux autres cuisines d\u2019h\u00f4tels sont distingu\u00e9es, Le Duo du Manotel (16), Il Lago, des Bergues (15), tandis que La Cigogne fait son entr\u00e9e \u00e0 14, tandis que <strong>Dominique Gauthier<\/strong>, du Beau-Rivage, reste \u00e0 18.<\/p>\n<p><strong>Serge Labrosse<\/strong>, de feu le Buffet de la Gare des Eaux-Vives, revient \u00e0 15\/20 au Flacon, \u00e0 Carouge, alors que le Restaurant du Lac, \u00e0 Versoix monte \u00e0 14.<\/p>\n<p><em><strong>Vaud\u00a0:<\/strong><\/em> en son Moulin d\u2019Assens, le chef d&rsquo;origine fran\u00e7aise, mais longtemps \u00e0 Avenches, <strong>Alain Laval<\/strong> obtient 15. Cette belle auberge sert notamment de magnifiques pi\u00e8ces de gibier \u2014 c\u2019est la saison\u00a0! Perte \u00e0 d\u00e9plorer\u00a0: L\u2019Ermitage, d\u2019<strong>Etienne Krebs<\/strong> (17\/20) ferme ses portes \u00e0 Clarens, remplac\u00e9 par des appartements de luxe\u2026 Et Le Raisin \u00e0 Cully revient \u00e0 14\/20.<\/p>\n<p><em><strong>F<\/strong><strong>ribourg\u00a0:<\/strong><\/em> chaises musicales \u00e0 Fribourg, o\u00f9 <strong>Serge Chenaux<\/strong>, 15\/20 au Schild, va traverser la Planche sup\u00e9rieure (en Basse ville) pour reprendre Le Sauvage. A La C\u00e8ne, pr\u00e8s de la poste centrale, arriv\u00e9e d\u2019un \u00e9l\u00e8ve d\u2019<strong>Anne-Sophie Pic<\/strong>, <strong>Romain Paillereau<\/strong>, cr\u00e9dit\u00e9 d\u2019embl\u00e9e de 15\/20\u00a0! A L\u00e9chelles, l\u2019originale Auberge communale gagne aussi un point (15), tout comme deux adresses de la vall\u00e9e de la Jogne, en Gruy\u00e8re, le restaurant de La Tour, \u00e0 Ch\u00e2tel-sur-Montsalvens, et l\u2019H\u00f4tel Cailler, \u00e0 Charmey.<\/p>\n<p><em><strong>Valais\u00a0:<\/strong><\/em> parmi les mouvements, l\u2019arriv\u00e9e de <strong>Callum Todd<\/strong> au Chetzeron, originale adresse de montagne \u00e0 Montana, retour \u00e0 14 pour <strong>Mauro Capelli<\/strong>, au Th\u00e9\u00e2tre \u00e0 Monthey, et 14 encore pour le tr\u00e8s sympathique Enclos de Val\u00e8re, \u00e0 Sion, une des plus belles terrasses de Suisse romande. La Vache qui vole, \u00e0 Martigny, fait \u00e9galement son entr\u00e9e \u00e0 14\u00a0: elle existe pourtant depuis de nombreuses ann\u00e9es, ce qui n\u2019est le cas ni du Monument, ni de L\u2019Indigo, de la Fondation Pierre Arnaud, \u00e0 Lens, \u00e0 mi-chemin de Sion et de Crans, tous deux \u00e0 14, comme Arola, \u00e0 l\u2019h\u00f4tel W \u00e0 Verbier, coach\u00e9 par le cuisinier catalan <strong>Sergi Arola<\/strong>.<\/p>\n<p>Enfin, la \u00abd\u00e9couverte de l\u2019ann\u00e9e\u00bb pour la Suisse romande est <strong>Martin Bruno<\/strong>, au Bo\u00e9chet, dans le Jura o\u00f9, \u00e0 l\u2019enseigne du Paysan Horloger, il g\u00e8re un h\u00f4tel, un restaurant et un petit mus\u00e9e. A d\u00e9couvrir, c\u2019est s\u00fbr\u00a0!<\/p>\n<h3>Une liste de 100 vignerons<\/h3>\n<p>Rayon vin, GaultMillau, dans sa version romande, publie la liste minimaliste (enseigne, adresse et adresse Internet) des 100 meilleurs vignerons de Suisse romande.
