Au programme, plusieurs conf\u00e9rences, dont celle de <strong>Richard Pfister<\/strong> sur <strong><a title=\"\u00abLes parfums du vin\u00bb   Un guide essentiel\" href=\"http:\/\/www.thomasvino.ch\/?p=11198\"><em>\u00ables mol\u00e9cules olfactives des vins\u00bb<\/em><\/a><\/strong>, \u0153no-parfumeur vaudois, et d\u2019<strong>Azelina Jaboulet-Vercherre<\/strong>, professeure \u00e0 l\u2019<strong><a title=\"Les chantiers de l\u2019Ecole H\u00f4teli\u00e8re de Lausanne\" href=\"http:\/\/www.thomasvino.ch\/?p=9407\">Ecole h\u00f4teli\u00e8re de Lausanne<\/a><\/strong>, sur <em>\u00abl\u2019amour du vin par l\u2019\u00e9coute de la nature \u00e0 travers l\u2019histoire\u00bb<\/em>, o\u00f9 elle a d\u00e9montr\u00e9 que <strong>Rudolf Steiner<\/strong>, le fondateur de la <em>\u00abbiodynamie\u00bb<\/em>, s\u2019est largement inspir\u00e9 de pr\u00e9ceptes liant \u00e9l\u00e9ments naturels et viticulture, \u00e9nonc\u00e9s notamment par les philosophes grecs.<\/p>\n<p>Le t\u00e9moignage d\u2019<strong>Anthony Hanson<\/strong>, consultant strat\u00e9gique de Christie\u2019s en Chine, a permis de confirmer en tous points nos observations lors de <strong><a title=\"Chine : quand \u00abla route de la soie\u00bb devient \u00abla route des vins\u00bb\" href=\"http:\/\/www.thomasvino.ch\/?p=11611\">notre grand voyage dans le nord de la Chine<\/a><\/strong> et dans le Ningxia. Pour rappel, les Chinois, qui ont doubl\u00e9 leur consommation de vin, n&rsquo;est sont encore qu&rsquo;\u00e0 0,35 litre de vin <em>per capita<\/em>, dont 80% de vin chinois, produit par pr\u00e8s de mille domaines et caves. 80% du vin chinois est rouge, dont 60% de cabernet sauvignon, 10% de merlot et de carmen\u00e8re et, en blanc, 70% de chardonnay, pour 10% de welschriesling.<\/p>\n<p>Un autre intervenant, acad\u00e9micien depuis peu, <strong>Jorge Lucky<\/strong>, de Sao Paulo, a parl\u00e9 de l\u2019\u00e9volution de la consommation de vins dans son pays, le Br\u00e9sil, brid\u00e9e par des taxes tr\u00e8s \u00e9lev\u00e9es qui emp\u00eachent les consommateurs d\u00e9j\u00e0 conquis de boire davantage et limitent l\u2019acc\u00e8s au vin des quelque 36 millions d\u2019habitants r\u00e9put\u00e9s faisant partie de la classe moyenne et riche, alors qu\u2019aucune barri\u00e8re culturelle ou religieuse n&#8217;emp\u00eache la consommation de vin.
