Et nous avions, une fois, dans la cuisine de Crissier, \u00e9voqu\u00e9 ce m\u00eame souvenir avec <strong>Philippe Rochat<\/strong>, qui avait fait la course, quarante ans plus t\u00f4t&#8230;<\/p>\n<p>Ce mercredi matin 8 juillet 2015, le chef de Crissier, l&rsquo;homme de la transition entre Girardet le perfectionniste et Violier, le Meilleur Ouvrier de France devenu meilleur chef de Suisse, s\u2019est effondr\u00e9, victime d\u2019un malaise cardiaque, pr\u00e8s de Cheseaux et ces routes du Gros-de-Vaud qu\u2019il aimait arpenter\u2026 A v\u00e9lo\u00a0!<\/p>\n<p>Il y a quatre ans, il avait remis son restaurant, l\u2019H\u00f4tel-de-Ville \u00e0 Crissier, \u00e0 Beno\u00eet Violier. On y avait <strong><a href=\"http:\/\/www.thomasvino.ch\/?p=9201\">v\u00e9cu de grands moments<\/a><\/strong>, juste au d\u00e9but de l&rsquo;\u00e9t\u00e9, quelques jours avant l\u2019annonce de cette retraite, longuement planifi\u00e9e\u2026 Ce d\u00e9c\u00e8s brutal endeuille <strong>toute la maison de Crissier (19\/20 Gault Millau, trois macarons Michelin) qui s&rsquo;appr\u00eatait \u00e0 f\u00eater, \u00e0 la rentr\u00e9e d&rsquo;ao\u00fbt, ses 60 ans d&rsquo;existence en quatre g\u00e9n\u00e9rations de chefs, les Girardet p\u00e8re et fils, Rochat et Violier<\/strong>, et les 40 ans de service de <strong>Louis Villeneuve<\/strong>, un adepte de v\u00e9lo, lui aussi.<\/p>\n<p>Sans aucun doute, <strong>Philippe Rochat<\/strong>, Vaudois de la Vall\u00e9e (de Joux), Combier, comme on dit, form\u00e9 au Buffet de la Gare de Romont, chez le chef gru\u00e9rien <strong>Cavuscens<\/strong>, \u00e9tait un authentique temp\u00e9rament. Un peu comme <strong>Roland Pierroz<\/strong>, le turbulent Valaisan. Des hommes de c\u0153ur, quoi, sanguins et victimes tous les deux d\u2019un malaise&#8230; cardiaque. Pierroz, 73 ans, dans la nuit du 6 au 7 avril 2015. Rochat, de douze ans son cadet, trois mois plus tard.
