A quel prix\u00a0? Bonne question\u00a0! Pour sa part le <a href=\"http:\/\/www.thomasvino.ch\/?p=13085\">Michelin Suisse 2016<\/a>, sorti la m\u00eame semaine, a d\u00e9sign\u00e9 le chef bavarois Peter Knogl, du palace Les Trois-Rois, \u00e0 B\u00e2le, troisi\u00e8me triple \u00e9toil\u00e9 de Suisse (apr\u00e8s Violier et Caminada).<br \/>\n<\/strong><\/p>\n<p><em>Pierre Thomas<\/em><\/p>\n<p>Le cuisinier de l\u2019ann\u00e9e est ainsi le chef d\u2019<em>\u00abun des domaines h\u00f4teliers les plus luxueux de Suisse\u00bb<\/em>, dixit Gault Millau, qui s\u2019y conna\u00eet, puisqu\u2019il a aussi distingu\u00e9 l\u2019h\u00f4tel Dolder Grand, dominant la ville de Zurich, <em>\u00abh\u00f4tel de l\u2019ann\u00e9e 2016\u00bb<\/em> (aussi gr\u00e2ce \u00e0 sa table, la meilleure de la m\u00e9tropole\u2026).<\/p>\n<p>C\u2019est donc <strong>Nenad Mlinarevic<\/strong>, 34 ans, du Park Hotel Vitznau, qui l\u2019emporte. Un disciple du chef suisse qui continue \u00e0 monter, <strong>Andreas Caminada<\/strong>\u00a0: il vient d\u2019ouvrir une annexe \u00e0 Bad Ragaz. Il d\u00e9croche ses 18 points, comme <strong>Mlinarevic<\/strong> \u00e0 Vitznau. Au Tessin, <strong>Dario Ranza<\/strong> est aussi originaire de Bergame\u00a0; \u00e0 la Villa Principe Leopoldo, il se voit cr\u00e9dit\u00e9 de 17 points. Sans les chefs fran\u00e7ais et les italiens, la haute cuisine suisse serait bien peu de chose, selon <em>Gault &amp; Millau<\/em>\u2026<\/p>\n<h3><strong>Entre palaces et nouveaux restos<\/strong><\/h3>\n<p>Palaces encore \u00e0 Lausanne\u00a0: s\u2019il ne d\u00e9croche aucun troph\u00e9e, <strong>Edgard Bovier<\/strong>, le chef du Lausanne-Palace, gagne un point pour sa Table \u00e0 18 (m\u00eame note que le chef de l\u2019ann\u00e9e, pour 6 restos \u00e0 19\/20 et 26 \u00e0 18\/20), soit autant que l\u2019adresse du m\u00eame groupe h\u00f4telier lausannois, le restaurant <strong>Anne-Sophie Pic<\/strong> au Beau-Rivage Palace, avec son nouveau cuisinier, disciple de la cheffe et de sa p\u00e9pini\u00e8re de Valence, <strong>Kevin Gatin<\/strong>. Son pr\u00e9d\u00e9cesseur, <strong>Guillaume Raineix<\/strong>, est cr\u00e9dit\u00e9 de 15 points dans son restaurant lausannois de la rue du Flon, l\u2019Eligo. Mais pas de note encore pour la Brasserie du Royal (Savoy), conseill\u00e9e par le triple \u00e9toil\u00e9 alsacien <strong>Marc Haeberlin<\/strong> et son chef sur place, <strong>Julien Krauss<\/strong>.<\/p>\n<p>En terre vaudoise, plusieurs nouveaux restaurants p\u00e9riph\u00e9riques de la capitale, ouverts ces trois derni\u00e8res ann\u00e9es et m\u00eame plus r\u00e9cemment, entrent dans le guide (350 restaurants mentionn\u00e9s dans son \u00e9dition romande)\u00a0: la Charrue \u00e0 Aclens, le Moulin de Cugy, Tout un Monde, \u00e0 Grandvaux, l\u2019Auberge du Peccau, \u00e0 Epalinges, le Baron Tavernier, \u00e0 Puidoux, qui a chang\u00e9 de concept, plus gastro \u00e0 l\u2019avenir, et, en ville, le P\u2019tit Lausannois. A Gen\u00e8ve, on est plus exotique, avec des promus \u00e0 l\u2019Epicentre, restaurant ouvert par <strong>Pierre Secretan<\/strong> (qui a tenu le bar \u00e0 vins Midi 20 \u00e0 Lausanne), le p\u00e9ruvien Pachacamac, le japonais Shibata et l\u2019italien florentino-argentin, La Bottega, une adresse dont on dit grand bien au bout du lac\u2026 de Gen\u00e8ve.<\/p>\n<p>Fribourg et l\u2019Arc jurassien sont plut\u00f4t calmes, pour ne pas dire d\u00e9laiss\u00e9s, avec quelques rares promotions. <strong>Serge Chenaux<\/strong> a travers\u00e9 la Planche Sup\u00e9rieure, en Basse Ville de Fribourg, passant du Schild (ferm\u00e9) au Sauvage (16 points), tandis que Le Vignier retrouve 15 points. Seule entr\u00e9e fribourgeoise, l\u2019H\u00f4tel-de-Ville de Vaulruz, en Gruy\u00e8re.<\/p>\n<p>Cuisine d\u2019h\u00f4tel encore \u00e0 Neuch\u00e2tel, avec un point de plus au Palafitte (m\u00eame groupe que le Beau-Rivage-Lausanne Palace), et une modeste note de 12 au Lake Side de l\u2019H\u00f4tel Beaulac, \u00e0 Neuch\u00e2tel, idem pour le Red Peper \u00e0 Saint-Blaise et pour le seul promu jurassien, La Croix-Blanche \u00e0 Rebeuvelier.<\/p>\n<p>En Valais, \u00e7a bouge un peu plus, avec des promotions \u00e0 plusieurs restaurants d\u00e9j\u00e0 connus, dont le Chalet Adrien, \u00e0 Verbier (promu \u00e0 17 points).
