Dont l\u2019H\u00f4tel-de-Ville de Crissier est un creuset de talents\u00a0: J\u00e9r\u00e9my Debraux, est le quatri\u00e8me repr\u00e9sentant suisse \u00e0 avoir remport\u00e9, le 23 novembre, \u00e0 Paris le prestigieux Prix culinaire Taittinger.<\/strong><\/p>\n<p>Ces six finalistes du <strong><a href=\"http:\/\/www.thomasvino.ch\/?p=12901\">GP Joseph Favre<\/a><\/strong> ont \u00e9t\u00e9 s\u00e9lectionn\u00e9s par le comit\u00e9 de la d\u00e9l\u00e9gation suisse de l\u2019Acad\u00e9mie culinaire de France. Ils ont propos\u00e9 des recettes sur un th\u00e8me impos\u00e9 (veau et poire Williams). Tous les candidats devaient \u00eatre \u00e2g\u00e9s d\u2019au moins 25 ans. Le doyen, <strong>Pasquale Altomonte<\/strong>, 37 ans, et chef de partie au restaurant de la direction de la banque Pictet &amp; Cie, \u00e0 Gen\u00e8ve. Deux chefs ont 33 ans, <strong>Marco Viviani<\/strong>, sous-chef de la clinique Hildebrand, de Brissago, et <strong>Elie Trumeau<\/strong>, chef de partie banquet \u00e0 l\u2019H\u00f4tel Pr\u00e9sident Wilson \u00e0 Gen\u00e8ve. Trois des candidats ont moins de 30 ans\u00a0: <strong>C\u00e9dric Agnellet<\/strong>, 29 ans, second de cuisine, au restaurant Compass Group de Patek Philippe, \u00e0 Gen\u00e8ve\u00a0; les deux plus jeunes, 25 ans, sont <strong>Xavier Watrelot<\/strong>, chef de partie viande au Floris, \u00e0 Ani\u00e8res (GE) et <strong>Guillaume Charlet<\/strong>, \u00e0 la maison Charlet, \u00e0 l\u2019origine une boulangerie-p\u00e2tissiserie familiale \u00e0 Gryon (VD).<\/p>\n<p>Ils seront en lice pour le Grand Prix Joseph Favre, le dimanche 13 mars, au CERM, \u00e0 Martigny, en public. Une ar\u00e8ne de mille places sera dress\u00e9e et, d\u00e8s le 15 d\u00e9cembre, on pourra r\u00e9server sa place sur le <strong><a href=\"http:\/\/www.gpjosephfavre.ch\/fr\/\">site du concours<\/a><\/strong>. Chaque candidat sera accompagn\u00e9 d\u2019un commis de cuisine de son choix, \u00e2g\u00e9 de moins de 24 ans, et d\u2019un apprenti de cuisine de moins de 19 ans, tir\u00e9 au sort le jour-m\u00eame par les organisateurs. Le jury sera pr\u00e9sid\u00e9 par <strong>Beno\u00eet Violier<\/strong> lui-m\u00eame.<\/p>\n<h3>Une premi\u00e8re pour Crissier<\/h3>\n<p>Le patron de Crissier est un fameux formateur\u00a0: un de ses employ\u00e9s, <strong>J\u00e9r\u00e9my Debraux<\/strong>, s\u2019est impos\u00e9, sur le th\u00e8me de l\u2019agneau fermier fran\u00e7ais, devant un Anglais, <strong>Rajkumar Holuss<\/strong>, de l\u2019H\u00f4tel Waterside, \u00e0 Londres, et le <strong>Fran\u00e7ais Alexandre Fabris<\/strong>, de l\u2019Hostellerie de Levernois, dans les environs imm\u00e9diats de Beaune. Le prix Taittinger a v\u00e9cu sa 49<sup>\u00e8me<\/sup> \u00e9dition, pr\u00e9sid\u00e9e par <strong>Emmanuel Renaut<\/strong>, triple \u00e9toil\u00e9 du Flocon de sel \u00e0 Meg\u00e8ve.<\/p>\n<p>C\u2019est la 1<sup>\u00e8re<\/sup> fois que Crissier \u00e9pingle ce prix \u00e0 une de ses toques.
