Jolie image en fait pour qualifier les acheteurs qui th\u00e9saurisent ces vins en cave, sans jamais les servir. Que ces vins soient aptes \u00e0 un vieillissement interminable brouille encore leur image. <\/strong><\/p>\n<p><em>Par Pierre Thomas<\/em><\/p>\n<p>De fait, <strong>la trentaine de membres de la <a href=\"http:\/\/www.grainnoble.ch\/\">Charte Grain Noble ConfidenCiel<\/a>, sign\u00e9e il y a vingt ans, en 2006, n\u2019ont pr\u00e9sent\u00e9 que vingt \u00e9chantillons, dont plusieurs de la m\u00eame cave, \u00e0 la d\u00e9gustation biennale (tous les deux ans) au Sensorama du Ch\u00e2teau de Villa \u00e0 Sierre, d\u00e9but f\u00e9vrier 2016.<\/strong><\/p>\n<p>Il faut dire, comme le rappelle l\u2019\u0153nologue <strong>Emmanuel Charpin<\/strong>, pr\u00e9sident du mouvement, que le climat du Valais de ces derni\u00e8res ann\u00e9es n\u2019a gu\u00e8re \u00e9t\u00e9 favorable aux\u00a0\u00abgrains nobles\u00bb, dont la d\u00e9finition ne figure dans aucun texte l\u00e9gal. Depuis 2007, dernier grand mill\u00e9sime de raisins <em>\u00abr\u00f4tis\u00bb<\/em> par la <em>\u00abpourriture noble\u00bb<\/em> (comme 2005, 2000 et 1990), des automnes et des d\u00e9buts d\u2019hiver trop secs ont emp\u00each\u00e9 le d\u00e9veloppement du champignon de <em>botrytis cirenea<\/em>. 2013 et 2014 laissent un peu d\u2019espoir, mais la plupart des vins, tir\u00e9s exclusivement des c\u00e9pages marsanne, pinot gris, sylvaner, arvine et amigne, sont encore en cours d\u2019\u00e9levage. Les autres ann\u00e9es, il faut se conter des ar\u00f4mes <em>\u00abfl\u00e9tris\u00bb<\/em> de la surmaturation sur souche.<\/p>\n<h3><strong>A mettre plus tard sur le march\u00e9<\/strong><\/h3>\n<p>Outre la d\u00e9gustation du Sensorama, les producteurs eux-m\u00eames s\u2019astreignent \u00e0 une d\u00e9gustation d\u2019agr\u00e9ment \u00e0 l\u2019aveugle pour <em>\u00abqualifier\u00bb<\/em> leur cuv\u00e9e. Dans les projets, Emmanuel Charpin carresse toujours l\u2019espoir de pouvoir constituer une \u00abcoop\u00e9rative de conservation\u00bb des meilleurs vins du Valais, et pas seulement des liquoreux. Car ces facons sont mis sur le march\u00e9 presque toujours trop t\u00f4t. \u00abPour les liquoreux, l\u2019id\u00e9al serait de les garder en cave entre 4 et 10 ans, avant de les lib\u00e9rer comme vins m\u00fbrs et \u00e0 point\u00bb, explique M. Charpin. Grosso modo, on estime que seuls 15 hectares (sur les pr\u00e8s de 5&rsquo;000 ha du Valais), situ\u00e9s sur la rive droite du Rh\u00f4ne, sont r\u00e9serv\u00e9s aux vins liquoreux de la Charte par la trentaine de producteurs. Et cette surface donne entre 10&rsquo;000 et 15&rsquo;000 litres par an de vins labellis\u00e9s, d\u2019un rendement huit \u00e0 dix fois inf\u00e9rieur \u00e0 celui d\u2019un blanc sec.<\/p>\n<h3><strong>Servir un vieux liquoreux sur tout un repas<\/strong><\/h3>\n<p>Les vieux mill\u00e9simes peuvent \u00eatre servis sur tout un repas, argumente l\u2019\u0153nologue, \u00e0 condition de jouer sur les \u00e9pices de chaque plat. Car cantonner les vins liquoreux aux desserts \u2014 au risque d\u2019alliances mal-\u00e0-propos, la grande sucrosit\u00e9 s\u2019opposant toujours \u00e0 la douceur de la plupart des desserts\u2026 \u2014 limite leur usage \u00e0 table. Et le <em>\u00abvin de m\u00e9ditation\u00bb<\/em> para\u00eet d\u00e9j\u00e0 pass\u00e9 de mode\u2026<\/p>\n<p>Lors de la cinqui\u00e8me <strong><a href=\"http:\/\/www.vieux-millesimes.ch\/\">\u00abNuit des vieux mill\u00e9simes\u00bb<\/a><\/strong>, le 3 mars 2016, organis\u00e9e par le journaliste sp\u00e9cialis\u00e9 Alexandre Truffer, qui est aussi charg\u00e9 des relations publiques de la Charte, un repas accompagn\u00e9 uniquement de plusieurs (vieux) Grain Noble ConfidenCiel aura lieu. La Charte entend aussi organiser deux \u00e9v\u00e9nements par an pour les prescripteurs. Parmi les plus gros producteurs de liquoreux figurent le <strong>Domaine du Mont-d\u2019Or<\/strong>, la coop\u00e9rative <strong>Provins<\/strong>, les domaines <strong>Rouvinez<\/strong> et <strong>Jean-Ren\u00e9 Germanier SA<\/strong>, et parmi les plus confidentiel(le)s, <strong>Marie-Th\u00e9r\u00e8se Chappaz<\/strong> et <strong>Fabienne Cottagnoud<\/strong>, dont les surmatur\u00e9s figurent r\u00e9guli\u00e8rement au sommet de la d\u00e9gustation.<\/p>\n<p><em>Paru dans <\/em>H\u00f4tellerie &amp;
