Sans doute en G\u00e9orgie o\u00f9 subsistent des vins faits comme il y a 8&rsquo;000 ans. Le chercheur am\u00e9ricain <strong>Patrick McGovern<\/strong> avait fait le tour de la question en 2003, dans son ouvrage fondamental <em>\u00abAncient Wine\u00bb<\/em> (Princeton University Press). Verdict\u00a0: le divin breuvage \u00e9tait n\u00e9 quelque part entre le Tigre et l\u2019Euphrate, au nord du \u00abCroissant fertile\u00bb. Mais dans l\u2019avant-propos de cet ouvrage (enfin\u00a0!) traduit en fran\u00e7ais \u00e0 fin 2015, <em>\u00abNaissance de la vigne et du vin\u00bb<\/em> (Editions Libre &amp; Solidaire), le chercheur suisse <strong>Jos\u00e9 Vouillamoz<\/strong> relance la piste g\u00e9orgienne. L\u2019\u00e9nigme pourrait bien \u00eatre r\u00e9solue en examinant, selon une nouvelle technique, l\u2019ADN de quelques p\u00e9pins de raisin, tr\u00e9sor recueilli sur un site arch\u00e9ologique n\u00e9olithique par le professeur <strong>Revaz Ramishvili<\/strong>, de Tbilissi, la capitale de la G\u00e9orgie.<\/p>\n<h3><strong>Faire du vin\u00a0? Rien de plus simple\u00a0!<\/strong><\/h3>\n<p>Une chose est s\u00fbre. Les G\u00e9orgiens font encore du vin comme il y a des mill\u00e9naires. On est all\u00e9 le v\u00e9rifier sur place. On laisse ce jus \u00abmijoter\u00bb en le remuant r\u00e9guli\u00e8rement jusqu\u2019\u00e0 ce qu\u2019il fermente. Ensuite, la jarre est ferm\u00e9e par un couvercle. Le plus simple est de garder ainsi le vin jusqu\u2019\u00e0 sa consommation ou jusqu\u2019\u00e0 la vendange suivante, pour \u00e9viter que le contenant se d\u00e9grade. Le raisin n\u2019est ni press\u00e9, ni ensemenc\u00e9 avec des levures s\u00e9lectionn\u00e9es, ni prot\u00e9g\u00e9 par du soufre, ni m\u00eame filtr\u00e9. Et pourtant, il n\u2019est pas du vinaigre\u00a0! Tel est le tour de force des G\u00e9orgiens. Et m\u00eame plus que jamais, la m\u00e9thode ayant ses adeptes autant chez les vignerons du nord de l\u2019Italie que du Sud, que chez les consommateurs branch\u00e9s de vin naturel, comme la New Yorkaise <strong>Alice Feiring<\/strong> (auteur de <em>\u00abNaked Wine\u00bb, \u00abLe vin nu\u00bb<\/em>), qu\u2019on peut suivre sur place gr\u00e2ce au film <em>\u00abA la source du vin\u00bb<\/em>, du r\u00e9alisateur fran\u00e7ais <strong>Philippe Gasnier<\/strong>, laur\u00e9at du dernier Festival Oenovid\u00e9o 2015.<\/p>\n<p>Les Sovi\u00e9tiques, au pouvoir en G\u00e9orgie de 1921 \u00e0 1991, avaient laiss\u00e9 les autochtones faire le vin \u00e0 leur go\u00fbt, en parall\u00e8le du vin \u00abindustriel\u00bb en cuves, ou plut\u00f4t en citernes pos\u00e9es \u00e0 l\u2019horizontale, largement export\u00e9 \u00e0 Moscou. Certains, comme <strong>Zaliko Bojadze<\/strong> et son fils perp\u00e9tuent cette tradition. Et sont connus jusqu\u2019au Japon! Un suivi consciencieux du \u00abpigeage\u00bb, l\u2019extraction r\u00e9guli\u00e8re du jus de raisin \u00e0 l\u2019aide d\u2019un simple b\u00e2ton qui le touille, \u00e9vite une oxydation exag\u00e9r\u00e9e du vin. Ainsi, le chinuri de <strong>Iago Bitarishvili<\/strong>, un mod\u00e8le de finesse, marqu\u00e9 par des ar\u00f4mes de pomme fra\u00eeche et d\u2019abricot. Le producteur exporte presque l\u2019entier de ses 2&rsquo;000 (!) rares bouteilles dans le monde entier et m\u00eame en Suisse (<em>chez <strong>Peter Bucher<\/strong>, <strong><a href=\"http:\/\/www.irrunei.ch\/home\/wein\/angebot\">www.irrunei.ch<\/a><\/strong> \u00e0 Dornach\/SO<\/em>).<\/p>\n<p>Chez le m\u00eame importateur, le mtsvane (nom du raisin qui signifie vert) de <strong>Babaneuri<\/strong>, \u00e0 la fois plus fonc\u00e9 \u2014 on l\u2019appelle \u00abvin orange\u00bb \u2014 et pourtant moins oxyd\u00e9 qu\u2019un vin jaune du Jura fran\u00e7ais, offre des senteurs de pomme et de noisette qui laissent supposer, au nez, un vin doux, alors qu\u2019il est sec et tannique, \u00e0 l\u2019image d\u2019un x\u00e9r\u00e8s de type palo cortado. De grandes caves comme <strong>Khareba<\/strong>, o\u00f9 le vin est \u00e9lev\u00e9 dans de formidables galeries souterraines, <strong>Tbilvino<\/strong> ou <strong>Mukhrani<\/strong>, proposent aussi des vins en \u00abkvervis\u00bb. Directeur de ce dernier domaine, <strong>Patrick Honnef<\/strong> <em>(photo ci-dessus)<\/em> a essay\u00e9, pour la premi\u00e8re fois en 2014, deux blancs \u00e0 base de rkatsiteli, le c\u00e9page blanc le plus plant\u00e9 de G\u00e9orgie.
