Affirmer que la Sicile produit les meilleurs vins blancs d\u2019Italie ne \u00abco\u00fbte\u00bb pas cher aux grandes r\u00e9gions (Toscane et Pi\u00e9mont d\u2019abord) r\u00e9put\u00e9es pour leurs vins rouges prestigieux. Seuls le Frioul-Venezia Giulia, au nord de Venise et de Trieste, peut rivaliser avec une telle production de vins blancs. En quantit\u00e9 et en qualit\u00e9.<\/p>\n<p>Ces derni\u00e8res ann\u00e9es, la plus grande \u00eele de la M\u00e9diterrann\u00e9e a replant\u00e9 des c\u00e9pages autochtones. C\u2019est vrai dans le sud ouest, o\u00f9, longtemps, le grillo a \u00e9t\u00e9 la <em>\u00abmati\u00e8re premi\u00e8re\u00bb<\/em> du marsala, ce vin doux mut\u00e9 dans le style du mad\u00e8re et destin\u00e9 d\u00e8s la fin du 18<sup>\u00e8me<\/sup> si\u00e8cle aux marins de l\u2019amiral anglais <strong>Nelson<\/strong>. M\u00fbri sur les terres de laves du volcan qui domine la ville de Catane, le cataratto local donne des vins puissants, aux ar\u00f4mes \u00abp\u00e9trol\u00e9s\u00bb qui rappellent le riesling (certains sols d\u2019Alsace et de la Moselle sont aussi d\u2019origine volcaniques). Ces vins blancs sont aptes au vieillissement. A Milo, le c\u00e9page a m\u00eame droit \u00e0 l\u2019appellation Etna bianco superiore\u00a0: dans ce lieu-dit, le blanc couvre 70% du vignoble, contre 20% pour l\u2019ensemble de l\u2019Etna. \u00abIci, le mois le plus important, c\u2019est septembre. Juin, juillet et ao\u00fbt sont chauds. Il faut que le raisin soit m\u00fbr avant les pluies de la mi-octobre. Il n\u2019y a aucun endroit au monde o\u00f9 nous pouvons obtenir une parfaite maturit\u00e9 du raisin et s\u2019assurer de temp\u00e9ratures fra\u00eeches durant la vinification\u00bb, se f\u00e9licite <strong>Marco Nicolosi<\/strong> du <em><strong>Barone de Villagrande<\/strong><\/em>, un domaine historique de l\u2019Etna, o\u00f9 l\u2019on n\u2019a jamais cess\u00e9 de faire du vin depuis 1727. Il est m\u00eame le seul Sicilien certifi\u00e9 selon les normes de Bio Suisse, plus s\u00e9v\u00e8res que les europ\u00e9ennes. Sa famille travaille dans la viticulture depuis quatre g\u00e9n\u00e9rations. Elle a rachet\u00e9, \u00e0 Marsala, l\u2019enseigne <em><strong>\u00abRallo 1860\u00bb<\/strong><\/em>, dont s\u2019\u00e9tait s\u00e9par\u00e9e, apr\u00e8s quelques p\u00e9rip\u00e9ties, la famille de <strong>Giacomo Rallo<\/strong>, d\u00e9c\u00e9d\u00e9 en mai, fondateur en 1983 de <em><strong>Donnafugata<\/strong><\/em> (et p\u00e8re du pr\u00e9sident de la DOC Sicilia, <strong>Antonio Rallo<\/strong>, nouveau pr\u00e9sident de l\u2019Union italienne des vins).<\/p>\n<p>Dans ses vignes, \u00e0 60 kilom\u00e8tres de Marsala, o\u00f9 se situe pour l\u2019instant la cave, <strong>Andrea Vesco<\/strong> est un <em>\u00abbianquiste\u00bb<\/em> qui crois au c\u00e9page grillo. Tir\u00e9 \u00e0 80&rsquo;000 bouteilles, d\u2019un rendement confortable de \u00ab120 quintaux \u00e0 l\u2019hectare\u00bb, vendu \u00e0 un prix moyen, son <em>Bianco Maggiore<\/em> a obtenu les \u00abtre bicchieri\u00bb, la distinction supr\u00eame du guide <em>Gambero Rosso<\/em>, pour le mill\u00e9sime 2014. Ce vin, d\u00e9gust\u00e9 \u00e0 la cave, offrait une attaque \u00e0 la fois fra\u00eeche et puissante, un volume gras, et une finale sur le citron confit. Et la troisi\u00e8me variante est celle qui a donn\u00e9 ses lettres de noblesse au marsala. Le Soleras Virgine Riserva, de vingt ans d\u2019\u00e2ge, exhale des notes de curry, de caramel, mais, en bouche, est sec, avec une belle complexit\u00e9 et un remarquable soutien acide, malgr\u00e9 les 19% d\u2019alcool de ce vin mut\u00e9.<\/p>\n<p>Pour mieux \u00abcoller\u00bb \u00e0 la demande, o\u00f9 le <em>Vergine<\/em> (sec) ne repr\u00e9sente qu\u2019une portion congrue, la maison va bient\u00f4t mettre sur le march\u00e9 un <em>\u00abruby\u00bb<\/em> plus jeune et un <em>\u00abdolce\u00bb<\/em>.
