Le 27 septembre, les sauvignons \u00e9taient presque enti\u00e8rement r\u00e9colt\u00e9s, comme les s\u00e9millons, bien dor\u00e9s, alors que d\u00e9butait la vendange des merlots. L\u2019influence du mildiou pr\u00e9coce sur les grappes et l\u2019h\u00e9t\u00e9rog\u00e9n\u00e9it\u00e9 des baies plus ou moins m\u00fbres obligeaient au tri des raisins, devenu quasi syst\u00e9matique. Lors d\u2019un repas au Ch\u00e2teau Olivier, <strong>Olivier Bernard<\/strong>, du Domaine de Chevalier, pr\u00e9sident de l\u2019Union des grands crus de Bordeaux, s\u2019est exclam\u00e9\u00a0: <em>\u00abIl faudrait des d\u00e9luges pour ab\u00eemer le mill\u00e9sime\u00bb<\/em>. Au Ch\u00e2teau Bouscaut, le propri\u00e9taire, <strong>Laurent Cogombles<\/strong>, r\u00e9sume\u00a0: <em>\u00abLe finish est magnifique. On est assez veinards\u00a0!\u00bb.<\/em><\/p>\n<p>Certains, d\u00e9j\u00e0, parient sur un des meilleurs mill\u00e9simes de ces 20 derni\u00e8res ann\u00e9es, m\u00eame s\u2019ils se situent m\u00e9t\u00e9orologiquement \u00e0 l\u2019oppos\u00e9 du 2015, encens\u00e9, malgr\u00e9 une h\u00e9t\u00e9rog\u00e9n\u00e9it\u00e9 patente en d\u00e9gustation primeurs, selon les d\u00e9gustateurs qui se livrent \u00e0 cet exercice de haute voltige commerciale\u2026 Mais, observe <strong>Laurent Cogomble<\/strong>s, <em>\u00abaucun grand mill\u00e9sime n\u2019a comport\u00e9 un printemps aussi pourri\u00bb<\/em>. Et <em>\u00abnous n\u2019avons jamais eu, non plus, un \u00e9t\u00e9 aussi sec\u00a0!\u00bb<\/em>. R\u00e9sultat en millim\u00e8tres de pluies\u00a0: \u00e0 la fin du printemps, il \u00e9tait tomb\u00e9 autant d\u2019eau que durant toute une ann\u00e9e (500 mm), tandis que du 20 juin au 13 septembre, il n\u2019en est tomb\u00e9 que 30 mm.<\/p>\n<h3>\u2014 + \u2014 = +?<\/h3>\n<p><strong>Ces deux situations extr\u00eames et oppos\u00e9es \u2014 printemps pourri et \u00e9t\u00e9 archisec \u2014 sont totalement inconnues des annales\u00a0!<\/strong> Un peu comme si moins par moins allait faire plus (comme le r\u00e9sume une journaliste parisienne).<\/p>\n<p>Mais, temp\u00e8re le propri\u00e9taire de Bouscaut, l\u2019absence d\u2019eau durant l\u2019\u00e9t\u00e9 pourrait s&rsquo;av\u00e9rer n\u00e9gatif. Il n\u2019a plu qu\u2019un tout petit peu le 13 septembre (40 mm) et il n\u2019y a pas eu l\u2019orage du 15 ao\u00fbt qui, d\u2019habitude, permet au Bordelais d\u2019\u00e9chapper \u00e0 la s\u00e8cheresse estivale\u2026 Ainsi, le stress hydrique a pu entra\u00eener un blocage de maturit\u00e9 dans les raisins, ce que la station suisse de Changins appelle le folletage\u00a0: des grappes avec des baies plus petites que d\u2019ordinaire, un peu fl\u00e9tries, peu color\u00e9es, et pas m\u00fbres, en fait. Les acidit\u00e9s et les richesses en sucre sont mod\u00e9r\u00e9es, associ\u00e9es \u00e0 des potentiels tanniques et aromatiques tr\u00e8s prometteurs.
