Avec 117 \u00e9toil\u00e9s, la Suisse capitalise <em>\u00abla plus grande concentration d&rsquo;\u00e9toiles par habitant en Europe\u00bb<\/em>, se f\u00e9licite Michelin.<\/strong><\/p>\n<p>La Suisse romande n\u2019est pas concern\u00e9e par l\u2019arriv\u00e9e des trois nouveaux 2 \u00e9toiles (sur 19)\u00a0: l\u2019<strong>After Seven<\/strong> \u00e0 Zermatt acc\u00e8de \u00e0 cette cat\u00e9gorie, comme l\u2019<strong>Ecco Zurich<\/strong>, troisi\u00e8me du groupe Giardino \u00e0 obtenir ce rang (apr\u00e8s Ascona et Saint-Moritz) et d\u2019embl\u00e9e, et le <strong>Silver<\/strong> \u00e0 Vals (GR) compl\u00e8te la promotion annuelle.<\/p>\n<p>La Suisse romande est mieux servie au niveau des une \u00e9toile (95, dont 12 nouveaux). Reprise ce printemps, la <strong>Pinte des Mossettes<\/strong>, au-dessus de Cerniat, en Gruy\u00e8re, d\u00e9croche le macaron, comme <strong>Le Petit-Manoir<\/strong>, \u00e0 Morges, <strong>La Maison du Village<\/strong>, \u00e0 Saint-Aubin-Sauges (NE), le <strong>Jardin des Alpes<\/strong>, \u00e0 Villars-sur-Ollon et le<strong> Ts\u00e9 Fung<\/strong> \u00e0 Gen\u00e8ve, un restaurant chinois tandis que le <strong>MEGU<\/strong>, table japonaise de Gstaad devient aussi \u00e9toil\u00e9. Le triple \u00e9toil\u00e9 <strong>Andreas Caminada<\/strong> d\u00e9croche une \u00e9toile pour son annexe de Bad Ragaz, IGNIV, et plusieurs promotions concernent les Grisons.<\/p>\n<h3>Claude Legras rend son \u00e9toile mais pas son tablier<\/h3>\n<p>Claude Legras, du Floris, \u00e0 Ani\u00e8res (GE), communique qu&rsquo;il a demand\u00e9 \u00e0 sortir des guides gastronomiques: <em>\u00abEn 46 ans de m\u00e9tier, j\u2019ai pass\u00e9 35 ans en cuisine \u00e0 relever le grand d\u00e9fi et le grand honneur de tenir au quotidien sur les plus grandes tables, puis au Floris depuis 1997, la promesse des \u00e9toiles et des belles notes qui m\u2019ont \u00e9t\u00e9 d\u00e9cern\u00e9es par le <\/em>Guide Michelin<em> et le <\/em>Gault&amp;Millau<em>.\u00a0 Je les en remercie. Aujourd\u2019hui, je suis \u00e0 un tournant de ma carri\u00e8re et de mon m\u00e9tier. Le monde de la haute gastronomie change, les attentes ne sont plus les m\u00eames. Les gens veulent une cuisine d\u2019excellence dans une proximit\u00e9 plus grande et pour des prix plus abordables.\u00bb<\/em><\/p>\n<p>Pr\u00e9cis\u00e9ment, chez Michelin, le <em>Bib gourmand<\/em>, soit trois plats (entr\u00e9e, plat principal et dessert) \u00e0 70 francs maxi, salue des effort de mod\u00e9ration.
