De quoi go\u00fbter les 2016 tout frais. Un mill\u00e9sime o\u00f9 la qualit\u00e9 \u2014 avec des vins frais, aromatiques et moins cors\u00e9s, en rouge que les 2015 \u2014 et la quantit\u00e9 \u2014 52 millions de litres, soit l\u2019\u00e9quivalent de la moiti\u00e9 de la consommation annuelle suisse de vin \u2014 sont au rendez-vous. Rappel\u00a0utile : fin avril, une grande partie du vignoble valaisan a gel\u00e9, condamnant 2017 \u00e0 une petite r\u00e9colte. Sur 4875 hectares, mille hectares sont touch\u00e9s \u00e0 100% et mille autres \u00e0 70%.<\/strong><\/em><\/p>\n<h2>La nouvelle g\u00e9n\u00e9ration Rouvinez se met \u00e0 la bi\u00e8re!<\/h2>\n<p><strong>Pour f\u00eater les 70 ans du groupe familial, la\u00a0\u00abnouvelle g\u00e9n\u00e9ration\u00bb des Rouvinez, \u00e0 Sierre, lance une bi\u00e8re, \u00e0 l\u2019occasion des caves ouvertes du Valais, ce (long) week-end de l\u2019Ascension.<\/strong><\/p>\n<p><em>Par Pierre Thomas<\/em><\/p>\n<p>La famille, n\u00e9e \u00e0 la colline de G\u00e9ronde, \u00e0 Sierre, reste le plus grand propri\u00e9taire viticole du Valais, avec 86 hectares de vignes en propri\u00e9t\u00e9, dont plusieurs grands domaines. Ses locaux de vinification sont situ\u00e9s chez Orsat, \u00e0 Martigny. Mais, de par ma m\u00e8re, nous sommes \u00e0 moiti\u00e9 Belges. Quand on a vraiment soif, on boit de la bi\u00e8re\u00a0! On n\u2019en fait qu\u2019une, r\u00e9serv\u00e9e \u00e0 la restauration et \u00e0 notre client\u00e8le priv\u00e9e, une double pale ale, \u00e0 base de c\u00e9r\u00e9ales peu torr\u00e9fi\u00e9es.\u00bb<\/em><\/p>\n<h3>L&rsquo;eau de Martigny et le savoir-faire de Li\u00e8ge<\/h3>\n<p>Les locaux d\u2019Orsat abritent d\u00e9j\u00e0 depuis l\u2019an pass\u00e9 une brasserie artisanale, White Frontier, tr\u00e8s active, et qui lance des bi\u00e8res saisonni\u00e8res. Pas question pour les Rouvinez d\u2019embo\u00eeter le pas \u00e0 une telle dynamique\u00a0: <em>\u00abOn vient de faire coup sur coup quatre brassins\u00a0: on arrive \u00e0 18&rsquo;000 litres. On a fourni des levures de vin \u00e0 des amis belges, universitaires de Louvain, qui ont lanc\u00e9 la Curtius, \u00e0 Li\u00e8ge. On s\u2019est aussi assur\u00e9 que l\u2019eau de Martigny, qui vient du glacier du Trient, est de bonne qualit\u00e9. Et on emploie, au printemps, du personnel moins occup\u00e9 du c\u00f4t\u00e9 vitivinicole. Une chose est s\u00fbre\u00a0: dans la bi\u00e8re, le mat\u00e9riau de d\u00e9part est stable. Dans le vin, on doute beaucoup plus\u00a0: une belle vendange est essentielle, puis il y a le travail en cave \u2014 mais est-ce la vendange ou la cave qui donne le bon vin\u00a0? Ou, plus probablement, la conjonction des deux\u00a0?\u00bb<\/em> Une seule bi\u00e8re, donc\u2026 quoique un vieillissement en barriques titille Fr\u00e9d\u00e9ric Rouvinez, qui a d\u00e9j\u00e0 fait des essais, \u00e0 go\u00fbter d\u00e8s l\u2019an prochain.<\/p>\n<h3>Quatre Grands Crus, un second vin et un mousseux<\/h3>\n<p><u><\/u>Pour les deux fr\u00e8res, <strong>Philippe<\/strong> et <strong>Fr\u00e9d\u00e9ric<\/strong>, et leur s\u0153ur, <strong>V\u00e9ronique Besson<\/strong>, revenue de Chine et d\u2019Allemagne \u2014 les enfants de <strong>Jean-Bernard<\/strong> \u2014, le vin reste \u00e9videmment primordial. Avec la complicit\u00e9 de leur oncle, l\u2019\u0153nologue <strong>Dominique Rouvinez<\/strong>, pr\u00e9sident du Grand Cru des Coteaux de Sierre, ils mettent sur le march\u00e9 des vins, \u00e9lev\u00e9s en grands f\u00fbts de bois suisse, tir\u00e9s de leurs propres vignobles, dans les quatre c\u00e9pages purs choisis par et pour le Grand Cru sierrois, en blanc, la petite arvine et la marsanne, en rouge, le cornalin et la syrah. Car cet automne sortira, dans la ligne haut de gamme inaugur\u00e9e en 2013, le <em>\u00abC\u0153ur de Domaines brut\u00bb<\/em> 2015, un effervescent en m\u00e9thode traditionnelle, dont un tiers en barrique, \u00e0 base de deux c\u00e9pages valaisans, la petite arvine et le pa\u00efen. Ce mousseux sera tir\u00e9 \u00e0 4000 bouteilles, \u00e0 42 francs, et 500 magnums. Jusqu\u2019en 2000, les parents Rouvinez avaient \u00e9labor\u00e9 <em>\u00abLe Galopin\u00bb<\/em> \u00e0 base de chardonnay.
