Las, la Nature en a d\u00e9cid\u00e9 autrement. Log\u00e9 dans une bouteille bourguignonne, ce pur assyrtiko en impose\u00a0: il a l\u2019\u00ab\u00e9paisseur\u00bb d\u2019un \u00abvin orange\u00bb, \u00e0 la mode aujourd\u2019hui de la G\u00e9orgie au Frioul, en passant par la Sicile et le Vully. Discret au nez, certes, mais d\u2019une remarquable tenue en bouche, avec du gras, de la puissance et une belle balance entre l\u2019acidit\u00e9 et la richesse (trois grammes de sucre). <em>\u00abSa texture, sa tension et sa salinit\u00e9 me font penser \u00e0 la petite arvine\u00a0!\u00bb<\/em>, s\u2019exclame <strong>Samuel Panchard<\/strong>, le nouvel \u0153nologue cantonal vaudois qui fut, auparavant, au service de Provins-Valais, rencontr\u00e9 sur place. Un vin de gastronomie, qu\u2019une une douzaine de restaurants de l\u2019\u00eele ont d\u00e9j\u00e0 r\u00e9f\u00e9renc\u00e9 sur leur carte des vins, o\u00f9 il est, souvent, le flacon le plus cher!<\/p>\n<p>Et du <em>\u00abvin orange\u00bb<\/em>, il y en a aussi, 300 bouteilles tir\u00e9es d\u2019une petite cuve inox,o\u00f9 le jus avait mac\u00e9r\u00e9 plus longuement, isol\u00e9e du reste des 3\u2019000 autres bouteilles. Cette ann\u00e9e, il est seul pour mener \u00e0 bien ces <em>\u00abvins de l\u2019extr\u00eame\u00bb<\/em>, comme le dit le CERVIM, \u00e0 Aoste, de ceux de l\u2019\u00eele de Santorin. Pour le blanc, le choix s\u2019est port\u00e9 sur le m\u00eame c\u00e9page, l\u2019assyrtiko, \u00e0 la peau \u00e9paisse, adapt\u00e9 au sol volcantique et qui r\u00e9siste au climat, sec et vent\u00e9 du <em>\u00abmeltem\u00bb<\/em> du nord.<\/p>\n<h3>Un projet qui voit plus large<\/h3>\n<p>Cet automne, l\u2019\u0153nologue va s\u2019essayer au \u00abvrai\u00bb rouge\u00a0: l\u2019an pass\u00e9, l\u2019antique et rare raisin mavrothiriko avait donn\u00e9 un ros\u00e9 fonc\u00e9, genre \u00abclairet\u00bb bordelais. Pas (encore\u00a0?) de barrique, seulement de l\u2019inox, dans la petite cave, achev\u00e9e l\u2019an pass\u00e9 \u00e0 c\u00f4t\u00e9 de la r\u00e9sidence secondaire de <strong>Zisyadis<\/strong>, o\u00f9 pousse un demi-hectare de rouge. Avec sa capacit\u00e9 de 20 tonnes de raisin et ses cuves inox thermor\u00e9gul\u00e9es, cet \u00e9quipement devrait profiter \u00e0 d\u2019autres producteurs de l\u2019\u00eele. Mais pour l\u2019instant, on voit, \u00e0 Patmos, davantage de vignes en friche ou en mauvais \u00e9tat, que de ceps vivaces. De son c\u00f4t\u00e9, le <strong>Domaine de Patoinos<\/strong> est en train d\u2019am\u00e9nager trois terrasses au-dessus de l\u2019ancienne ferme qui sert de lieu d\u2019accueil et de vente sur le domaine de Petra. Au pluriel\u2026 \u00e0 l\u2019entr\u00e9e du seul domaine de l\u2019\u00eele de Patmos\u00a0! C\u2019est que cinq des (douze) grandes \u00eeles du Dod\u00e9can\u00e8se participent \u00e0 l\u2019op\u00e9ration. La replantation de la vigne et la construction de nouvelles caves y est encourag\u00e9e \u00e0 la fois par l\u2019Union europ\u00e9enne et par la Gr\u00e8ce, au titre de maintien de l\u2019activit\u00e9 \u00e9conomique sur ces \u00eeles menac\u00e9es par la monoculture du tourisme. Cet \u00e9t\u00e9, le critique bordelais <strong>Jean-Marc Quarin<\/strong> est all\u00e9 faire un tour \u00e0 Rhodes, la plus touristique, o\u00f9 sept domaines sont inscrits \u00e0 la route des vins, notamment au pied du Mont Attavyros, \u00e0 Embonas. Kos, secou\u00e9e par un tremblement de terre en juin, compte trois domaines, Leros, deux, Lipsi et Patmos, chacun un. <strong>Au total, 2630 hectares sont recens\u00e9s, soit autant que les vignobles genevois et tessinois r\u00e9unis. Ils produisent 4 millions de litres de vin, aux deux tiers blancs.<\/strong><\/p>\n<p>Entre les \u00eeles, il faut se d\u00e9placer en bateau\u2026 A Lipsi, \u00e0 50 minutes de ferry de Patmos, la cave, un vrai petit bijou, est juste derri\u00e8re l\u2019\u00e9cole. Des terrasses de vignes s\u2019\u00e9tagent en prolongement du pr\u00e9au. Le domaine affiche un peu moins de 5 hectares, pour 25&rsquo;000 bouteilles par an, d\u00e8s le mill\u00e9sime 2013. M\u00eame le blanc de base, un assemblage d\u2019assyrtiko (60%) et d\u2019athiri, \u00e9lev\u00e9 six mois en f\u00fbts de 500 litres. Le vin le plus int\u00e9ressant de la cave, l\u2019<em>Aposperitis<\/em> (\u00ab\u00e9toile du matin\u00bb), renoue avec une tradition des \u00eeles de la M\u00e9diterran\u00e9e, de Pantelleria (au sud de la Sicile) \u00e0 Samos (au nord de la mer Eg\u00e9e)\u00a0: le passerillage du raisin au soleil br\u00fblant de l\u2019\u00e9t\u00e9, \u00e0 m\u00eame le sol devant la cave. Ici, \u00e7a n\u2019est pas du muscat d\u2019Alexandrie, mais un c\u00e9page rouge local, le fokiano, qui donne un vin \u00e9quilibr\u00e9, pas trop doux, avec une note de raisin de Corinthe, de noix et de caramel sal\u00e9. Il existe en deux variantes plus ou moins longuement \u00e9lev\u00e9es en barriques. Plusieurs (gros) ferrys la desservent depuis Le Pir\u00e9e, en six \u00e0 huit heures de navigation. Elle n\u2019a pas d\u2019a\u00e9roport, mais est situ\u00e9e, dans la mer Eg\u00e9e, entre, du nord au sud, Samos, Leros, Kos et Rhodes, qu\u2019il est possible de rejoindre par avion, puis de l\u00e0, Patmos par ferry. Les navires de croisi\u00e8re s\u2019arr\u00eatent souvent dans la baie de Skala.<\/p>\n<p>Sur l\u2019\u00eele, une trentaine d\u2019h\u00f4tels reconnus et une cinquantaine de restaurants, tavernes ou cantines, ouverts en \u00e9t\u00e9. Plus loin au sud, en direction de la seule plage de sable fin, Psili (20 minutes \u00e0 pied du parking, taverne et quelques arbres\u2026), le <strong>Tarsanas<\/strong> (++30-22470-32159), au chantier naval de Diakofti, qui sert des poissons du jour sur une belle terrasse.
