On est donc pass\u00e9 d\u2019une vendange d\u2019un hectare \u00e0 deux hectares, et de huit \u00e0 treize parcelles, \u00e0 80% de petite arvine et 20% de savagnin blanc, alias pa\u00efen-heida, les deux grands c\u00e9pages blancs plant\u00e9s en Valais. <strong>Damien Caruzzo<\/strong>, form\u00e9 \u00e0 l\u2019\u00e9cole de l\u2019\u0153nologue maison retrait\u00e9e <strong>Madeleine Gay<\/strong>, a vinifi\u00e9 ce riche jus, tir\u00e9 de grappes enti\u00e8res, en barriques neuves (neuf sur dix), de deux tonneliers fran\u00e7ais, <strong>Fran\u00e7ois Fr\u00e8res<\/strong> et <strong>Demptos<\/strong>, habitu\u00e9s aux exigences suisses. Car Eclat est le petit fr\u00e8re, en blanc, de <a href=\"https:\/\/thomasvino.ch\/?p=14540\"><strong>l\u2019assemblage rouge Electus<\/strong><\/a>, la cuv\u00e9e haut de gamme de Provins, d\u00e9velopp\u00e9e avec le savoir-faire d\u2019un consultant de Bordeaux, le professeur d\u2019\u0153nologie, expert en \u00e9levage des vins sous bois, <strong>Nicolas Vivas<\/strong>. Les deux vins sortent du cadre de la coop\u00e9rative et sont propos\u00e9s selon un concept de d\u00e9gustation et de promotion d\u00e9di\u00e9.<\/p>\n<p>Avec une solide colonne vert\u00e9brale acide, ce blanc sec r\u00e9pond en tous points aux crit\u00e8res d\u2019un <em>\u00abvin de gastronomie\u00bb<\/em>. Le bois, et ses nuances vanill\u00e9es, le domine encore. Mais son volume et son \u00e9quilibre impressionnent.<\/p>\n<p>On peut regretter que la petite arvine n\u2019<em>\u00abexplose\u00bb<\/em>, ni au nez, ni en bouche, o\u00f9 elle assure toutefois des flaveurs r\u00e9manentes de citron vert. C\u2019est la vertu d\u2019un assemblage\u00a0: il doit \u00e9lever au carr\u00e9 chaque \u00e9l\u00e9ment pris s\u00e9par\u00e9ment. Min\u00e9ral, comme on dit volontiers\u00a0? Solide comme un roc, oui\u00a0!
