La caviste-artiste s\u2019en est inspir\u00e9e. Et d\u2019abord du c\u00e9page pedro ximenes, le PX, le plus voluptueux des exemples (d\u2019o\u00f9 le suffixe AX). Elle a r\u00e9colt\u00e9 en 2006, puis en 2007, de l\u2019amigne \u00e0 hauts degr\u00e9s de sucre naturel\u00a0: 210\u00b0 et 180\u00b0 Oechsl\u00e9. Ces deux riches mo\u00fbts ont ferment\u00e9, lentement et s\u00e9par\u00e9ment, dans de petits f\u00fbts de 110 litres. Durant dix ans, ni <em>\u00absolera\u00bb<\/em> (m\u00e9lange du vin le plus vieux avec le plus jeune), ni <em>\u00abrecapage\u00bb<\/em> (action de compl\u00e9ter le f\u00fbt pour compenser l\u2019\u00e9vaporation), mais <em>\u00abmutage\u00bb<\/em>, par ajout d\u2019alcool apr\u00e8s fermentation, puis assemblage, pour stabiliser le vin \u00e0 21% volume.<\/p>\n<p>Le r\u00e9sultat est un OVNI (<em>\u00abobjet vineux non identifi\u00e9\u00bb<\/em>), tir\u00e9 \u00e0 800 flacons de 50 cl\u00a0: couleur d\u2019ambre, nez puissant, vineux. L\u2019attaque est riche, ample, grasse, avec des go\u00fbts de figue, de datte, de raisin de Corinthe, et une finale aiguis\u00e9e par l\u2019alcool ajout\u00e9, sur une grande liqueur (plus de 150 g\/l. de sucre r\u00e9siduel).
