Mais quelle prise aura le temps sur le <em>\u00abRD extra brut 2004\u00bb<\/em>\u00a0?<\/strong><\/p>\n<p><em>Par Pierre Thomas<\/em><\/p>\n<p>Il faut bien un nom de code pour caract\u00e9riser le haut du panier de la marque fond\u00e9e en 1829 \u00e0 A\u00ff. Pr\u00e8s de deux si\u00e8cles plus tard, Bollinger, qui reste une maison familiale ind\u00e9pendante, affiche 2,8 millions de bouteilles, tir\u00e9es de 164 hectares de vignes en propri\u00e9t\u00e9 et d\u2019un apport de vendange de 90 hectares. (photo Leif Carlsson)<\/em><\/p><\/div>\n<p>Arriv\u00e9 dans cette maison historique il y a cinq ans, en m\u00eame temps que le chef de cave <strong>Gilles Desc\u00f4tes<\/strong>, <strong>Denis Bunner<\/strong> avait fait le d\u00e9placement. Il a tenu une \u00abmaster class\u00bb passionnante sur l\u2019\u00e9volution du champagne et la fonction essentielle du d\u00e9gorgeage, l\u2019action d\u2019\u00e9liminer les levures apr\u00e8s seconde fermentation en bouteille et bouchage d\u00e9finitif du flacon. Une op\u00e9ration qui donne <em>\u00abune nouvelle vie au vin\u00bb<\/em>.<\/p>\n<h3><strong>Trois le\u00e7ons magistrales<\/strong><\/h3>\n<p>D\u2019abord, deux verres de la RD 2002, servis \u00e0 20 minutes d\u2019\u00e9cart, l\u2019un repos\u00e9, l\u2019autre juste d\u00e9bouch\u00e9\u00a0: le second para\u00eet certes plus frais, mais surtout moins vineux.<\/p>\n<p><strong>Premi\u00e8re le\u00e7on\u00a0: comme tout vin, un champagne gagne \u00e0 \u00eatre ouvert \u00e0 l\u2019avance et non servi quand on fait <em>\u00abp\u00e9ter le bouchon\u00bb<\/em>, trivialement dit\u00a0!<\/strong><\/p>\n<p>Ensuite, un RD 1996, l\u2019un d\u00e9gorg\u00e9 il y a six mois, soit 21 ans apr\u00e8s la vendange, l\u2019autre, il y a six ans, 15 ans apr\u00e8s la vendange\u00a0: le jour et la nuit\u00a0! Le plus r\u00e9cemment d\u00e9gorg\u00e9 avait certes des ar\u00f4mes de maturit\u00e9, de miel, de pain grill\u00e9, de fum\u00e9, mais le second souffrait d\u2019une r\u00e9duction, avec des notes d\u2019allumette frott\u00e9e, sur une amertume saillante.<\/p>\n<p><strong>Deuxi\u00e8me le\u00e7on : comme le vin est \u00e9labor\u00e9 bouteille par bouteille, chaque flacon de champagne \u00e9volue diff\u00e9remment.<\/strong><\/p>\n<p>Puis, un verre tir\u00e9 d\u2019un flacon de RD 2004 de 75 cl, l\u2019autre d\u2019un magnum. Moins de chardonnay dans le 2004 que dans le 2002 (34% pour 40%) et davantage de pinot noir, avec des notes g\u00e9n\u00e9reuses de fruits jaunes, d\u2019ananas confit, de mangue et de noisette sur le premier, un peu de retenue, de l\u2019amande am\u00e8re dans le second.<\/p>\n<p><strong>Troisi\u00e8me le\u00e7on\u00a0: pour un champagne plus m\u00fbr, complexe, privil\u00e9giez un grand format\u2026 Et sur quoi boire un tel nectar d\u2019exception, \u00e0 240 francs le flacon? Et tous les vins de base font les deux fermentations, l\u2019alcoolique et la malolactique en f\u00fbts.<\/strong> <strong><a href=\"https:\/\/thomasvino.ch\/?p=14747\">C\u2019est ce qui fait la diff\u00e9rence avec Krug<\/a><\/strong>, pour citer une autre marque qui \u00e9volue au m\u00eame niveau\u00a0: avant malo, le vin est sorti de la futaille, avant d\u2019\u00eatre transf\u00e9r\u00e9 dans les bouteilles o\u00f9 il refermente selon les r\u00e8gles de l\u2019art champenois. Chez Bollinger, les vins passent encore 4 \u00e0 6 mois en barriques, apr\u00e8s fermentation malolactique. <strong>Un RD s\u00e9journe ensuite une douzaine d\u2019ann\u00e9es en bouteille individuelle, ferm\u00e9e non pas par un bouchon-couronne m\u00e9tallique, mais par un bouchon de li\u00e8ge, avant le d\u00e9gorgeage manuel.<\/strong> S\u2019agissant d\u2019un extra brut, l\u2019ajout de liqueur se limite \u00e0 3 g, soit du sucre de canne dissous dans un vin identique\u00a0: <em>\u00abOn garde le vin tel qu\u2019il est\u00bb<\/em>. Et, confirme, <strong>Julien Alsoufi<\/strong>, le chef sommelier du B\u00fcrgenstock, devant une cave r\u00e9serv\u00e9e aux seuls champagnes, approvisionnant les douze restaurants du Resort, <em>\u00abau contraire des Romands, les Al\u00e9maniques n\u2019ont pas encore une grande connaissance du champagne\u00bb<\/em>.
