S\u2019il est (bien) n\u00e9 dans la capitale fran\u00e7aise, son id\u00e9e, il l\u2019a eue \u00e0 Lausanne, o\u00f9 il habite.<\/strong><\/p>\n<p><em>Par Pierre Thomas<\/em><\/p>\n<p>On peut <em>\u00abpenduler\u00bb<\/em> en TGV entre Lausanne et Paris. Comme <strong>Matthieu Bosser<\/strong>. En 1978, quand il est n\u00e9, son p\u00e8re, n\u00e9gociant en vins, venait de reprendre la repr\u00e9sentation dans la capitale fran\u00e7aise de la maison du Beaujolais Dub\u0153uf, qu\u2019il gardera jusqu\u2019en 2003. Son fils travaille en Suisse depuis 2005, dans le n\u00e9goce du sucre. Mais aussi, de retourner \u00e0 Paris si je retournais en France. L\u2019\u00e9quation \u00e9tait simple\u00a0: il suffisait de faire du vin \u00e0 Paris\u00a0! Au fond, on peut faire du vin partout en France\u00a0!\u00bb<\/em><\/p>\n<h3><strong>Dans la mouvance des \u00aburban wineries\u00bb<\/strong><\/h3>\n<p>L\u2019id\u00e9e est dans l\u2019air du temps. Les <em>\u00aburban wineries\u00bb<\/em> sont n\u00e9es sur la c\u00f4te Ouest des Etats-Unis au d\u00e9but de ce 2<sup>\u00e8me<\/sup>mill\u00e9naire. On en compte plusieurs \u00e0 San Francisco, mais aussi \u00e0 Seattle, Portland, Vancouver (sur la m\u00eame c\u00f4te, au Canada), \u00e0 Dallas, \u00e0 New York (Brooklin et Manhattan), \u00e0 Hong Kong, \u00e0 Londres (Londoncru \u00e0 Fulham), \u00e0 Marseille (Microcosmos <em>et lire tout \u00e0 la fin<\/em>) et dans la banlieue parisienne, \u00e0 Montreuil (La winerie).<\/p>\n<p>Au contraire du vignoble de Montmartre, fort connu, et modeste survivant des quelque 40&rsquo;000 hectares de vignes en Ile-de-France avant le chemin de fer et le phyllox\u00e9ra, les raisins ne viennent pas de Paris. Mais si le Londonien <strong>Cliff Robertson<\/strong> fixe \u00e0 36 heures maximum le d\u00e9lai entre la cueillette (manuelle) des raisins et l\u2019acheminement (en camion r\u00e9frig\u00e9r\u00e9) jusqu\u2019aux cuves de vinification citadines en inox, les <em>\u00abVignerons parisiens\u00bb<\/em> n\u2019ont besoin que d\u2019une douzaine d\u2019heures pour amener la vendange en cagettes des C\u00f4tes-du-Rh\u00f4ne m\u00e9ridionales jusqu\u2019\u00e0 la capitale. Photo : Fabrice Dunou<\/em><\/p><\/div>\n<h3><strong>L\u2019appui de <em>\u00abpointures\u00bb<\/em> rhodaniennes<\/strong><\/h3>\n<p><em>\u00abDe la taille des ceps \u00e0 la mise en bouteille, on fait tout\u00a0!\u00bb<\/em>, explique <strong>Matthieu Bosser<\/strong>. <em>\u00abJ\u2019ai d\u00fb m\u2019entourer, car je ne sais pas faire du vin\u2026\u00bb<\/em> Sur place, dans le Sud, deux associ\u00e9s s\u2019occupent des vignes. Et ils sont bien connus en France, du c\u00f4t\u00e9 de Ch\u00e2teauneuf-du-Pape, tant <strong>Fr\u00e9d\u00e9ric Duseigneur<\/strong>, consultant en biodynamie, qu\u2019<strong>Emmanuel Gagnepain<\/strong>, \u0153nologue-conseil. Ensemble, ils louent en fermage \u00e0 des vignerons locaux une dizaine de parcelles, suivies toute l\u2019ann\u00e9e. Tout est cultiv\u00e9 en bio (et 40% en biodynamie) et le chai est certifi\u00e9 Ecocert. <em>\u00abOn d\u00e9finit le profil aromatique de nos vins et on remonte \u00e0 la source, au plus pr\u00e8s de ce que nous voulons\u00bb<\/em>, par exemple \u00e0 Visan, <em>\u00aben altitude\u00bb<\/em>.<\/p>\n<p>En automne 2016, les premiers vins sont sortis du pressoir vertical, puis des cuves inox et des barriques de la rue de Turbigo. Il a fallu pr\u00e8s de deux ans pour obtenir l\u2019autorisation de vinifier dans la capitale. Les vins, parce qu\u2019ils ne sont pas \u00e9labor\u00e9s dans la r\u00e9gion de production des raisins, perdent le droit \u00e0 l\u2019appellation d\u2019origine contr\u00f4l\u00e9e (AOC), au profit de <em>\u00abVin de France\u00bb<\/em> qui, soit dit en passant, fait un tel tabac \u00e0 l\u2019export qu\u2019il manque aujourd\u2019hui du vin sous ce titre g\u00e9n\u00e9rique pour satisfaire le march\u00e9\u00a0!<\/p>\n<p>Les cuves de la capitale permettent de vinifier 30&rsquo;000 litres, et cette vitesse de croisi\u00e8re devrait \u00eatre atteinte avec le mill\u00e9sime 2017. Les deux principales cuv\u00e9es sont tir\u00e9es \u00e0 10&rsquo;000 flacons, un blanc, <em>\u00abLut\u00e8ce\u00bb<\/em>, assemblage de viognier, de marsanne et de roussanne, et un rouge, <em>\u00abTurbigo\u00bb<\/em>, \u00e0 base de cinsault, tous deux sans \u00e9levage en f\u00fbts. Un autre blanc, <em>\u00abEn 508\u00bb<\/em>, est issu de grenache blanc ferment\u00e9 sous bois, et deux rouges, le grenache <em>\u00abLes Templiers\u00bb<\/em>, et la syrah <em>\u00abHaussmann\u00bb<\/em>, sont \u00e9galement \u00e9lev\u00e9s en demi-muids. Ni fouloir, ni pompe, <em>\u00abon intervient tr\u00e8s peu en cave\u00bb<\/em>, assure <strong>Matthieu Bosser<\/strong>. <em>\u00abL\u2019ajout de SO2 ne se fait qu\u2019\u00e0 la mise en bouteille. Photo : Fabrice Dunou<\/em><\/p><\/div>\n<h3><strong>Une aventure au service des Parisiens<\/strong><\/h3>\n<p>A Paris, le chai ne dispose pas de bar \u00e0 vins, mais d\u2019une boutique. <strong>On peut le visiter, \u00e0 11 h., du mardi au vendredi, avec une d\u00e9gustation des cinq vins (25 euros).<\/strong> Une salle permet de dispenser des cours d\u2019\u0153nologie ou de d\u00e9gustation, comme <em>\u00abc\u00e9page et terroir\u00bb<\/em> \u00e0 59 euros. Et il est possible de le privatiser pour des \u00e9v\u00e9nements. <em>\u00abA Paris, les gens boivent du vin mais ne le connaissent pas trop. On leur a dit \u00abfaites deux stations de m\u00e9tro et on vous montre comment on \u00e9labore le vin\u00a0!\u00bb<\/em>. Pour le vendre, l\u2019argument du <em>\u00abfait \u00e0 Paris\u00bb<\/em> n\u2019est pas suffisant. <em>\u00abOn est all\u00e9 voir les restaurants avec sommelier, pour les convaincre par la d\u00e9gustation. On arrivait certes avec une histoire diff\u00e9rente, mais il a fallu convaincre les sceptiques\u00a0!\u00bb<\/em><\/p>\n<p>Les deux vins que <strong>Matthieu Bosser<\/strong> m\u2019a fait d\u00e9guster sont fort bien faits\u00a0: le <em>\u00abLut\u00e8ce\u00bb<\/em> blanc 2016 offre un joli nez de p\u00eache et d\u2019abricot, un volume assez riche et gras, mais une belle fra\u00eecheur, sur des notes d\u2019amande. Et le grenache noir <em>\u00abLes Templiers\u00bb<\/em> 2015 pr\u00e9sentait des ar\u00f4mes typ\u00e9s sudistes, m\u00fbrs, compot\u00e9s, \u00e9pic\u00e9s, de poivre et de cannelle, et une bonne vivacit\u00e9 en bouche.
