Il se veut l\u2019\u00e9v\u00e9nement phare, populaire et VIP, du nouveau salon Epicuria, qui occupera le Centre d\u2019expositions et de r\u00e9unions de Martigny (CERM), du vendredi 23 au mardi 27 novembre.<\/strong><\/p>\n<p><em>Par Pierre Thomas<\/em><\/p>\n<p>La deuxi\u00e8me ville du Valais (apr\u00e8s Sion) prend r\u00e9solument le relais des halles d\u00e9faillantes de Beaulieu-Lausanne\u2026 Sa Foire du Valais a plus de succ\u00e8s que le Comptoir suisse, dont les jours sont compt\u00e9s. Et, apr\u00e8s l\u2019annulation de Gastronomia, le CERM lance un nouveau salon du genre, sous le nom de CaReHo. <em>\u00abNous avons enregistr\u00e9 cinquante exposants, au-dessus de nos objectifs\u00bb<\/em>, se r\u00e9jouit <strong>Nicolas Crettenand<\/strong>, qui rappelle que le Valais entend se positionner dans l\u2019\u0153notourisme et l\u2019\u0153nogastronomie <em>\u00abavec le plus grand ratio de points du guide GaultMillau par t\u00eate d\u2019habitant de Suisse\u00bb<\/em>. En outre, un <em>\u00abmarch\u00e9 du terroir\u00bb<\/em>, qui prend le relais du <em>\u00abmarch\u00e9 des saveurs\u00bb<\/em>, r\u00e9unira une soixantaine d\u2019exposants. Une zone d\u2019ateliers et une <em>\u00abplace des artisans et cr\u00e9ateurs\u00bb<\/em>, plus la <em>Cinqui\u00e8me Glorieuse<\/em>, un salon d\u2019une s\u00e9lection d\u2019une quarantaine parmi les meilleurs vignerons-encaveurs du Valais (prolongement des quatre Glorieuses de mai, d\u00e9gustations r\u00e9serv\u00e9es aux professionnels), compl\u00e8teront l\u2019offre de cette nouvelle manifestation.<\/p>\n<p><strong>Du vendredi 23 au mardi 27 novembre, le <a href=\"http:\/\/salonepicuria.ch\/fr\/site\/epicuria\/\">Salon Epicuria<\/a> sera accessible au public, au prix de 5 francs l\u2019entr\u00e9e. Entre le vendredi d\u00e8s 17 h. (\u00e0 21 h.), et le samedi (11 h. \u00e0 21 h.), d\u00e9di\u00e9 au grand public, puis le lundi et mardi (de 10 h. \u00e0 18 h.), consacr\u00e9 plut\u00f4t aux professionnels de la restauration, le dimanche fera la charni\u00e8re, selon ce m\u00eame horaire. Et c\u2019est justement ce jour-l\u00e0 qu\u2019aura lieu le Grand Prix Joseph Favre.<\/strong><\/p>\n<h3><strong>Un quintette pour une truite et du chevreuil<\/strong><\/h3>\n<p>Dans son restaurant de l\u2019H\u00f4tel-de-Ville de Crissier, qui porte d\u00e9sormais son nom en toutes lettres au-dessus de la porte, <strong>Frank Giovannini<\/strong>, son pr\u00e9sident, a expliqu\u00e9 l\u2019enjeu de ce genre de comp\u00e9tition \u00abpour notre m\u00e9tier manuel, o\u00f9 il faut travailler et s\u2019entra\u00eener sans rel\u00e2che pour s\u2019am\u00e9liorer\u00bb. Pr\u00e8s de mille personnes sont attendues, d\u00e8s le matin du dimanche 25 novembre, dont 400 VIP, invit\u00e9s ou qui auront ch\u00e8rement pay\u00e9 leur place, et qui pourront assister aux performances des cinq \u00e9quipes candidates depuis une passerelle en surplomb\u2026 Dans l\u2019apr\u00e8s-midi, on saura alors qui succ\u00e8dera \u00e0 <strong>C\u00e9dric Agnellet<\/strong>, employ\u00e9 du groupe Compass, second de cuisine chez l\u2019horloger Patek Philippe, \u00e0 Gen\u00e8ve, victorieux en d\u00e9cembre 2016.<\/p>\n<h3><strong>Un Valaisan \u00e0 r\u00e9habiliter<\/strong><\/h3>\n<p>Cette comp\u00e9tition remet en m\u00e9moire l\u2019auteur valaisan du premier <em>\u00abGrand dictionnaire universel de cuisine pratique\u00bb<\/em>, paru en 1899. N\u00e9 \u00e0 Vex, <em>\u00abmont\u00e9\u00bb<\/em> \u00e0 l\u2019\u00e2ge de 20 ans \u00e0 Paris, <strong>Joseph Favre<\/strong> fonda l\u2019Acad\u00e9mie culinaire de France. <strong>Albert Mudry<\/strong>, secr\u00e9taire g\u00e9n\u00e9ral du concours, m\u00e9decin de son \u00e9tat, rappelle que le Valaisan de Paris \u00e9tait favorable au concept de <em>\u00abcuisine hygi\u00e9nique\u00bb<\/em>.
