Form\u00e9 en Bourgogne (ce qui est rare pour un Helv\u00e8te\u2026), le Sierrois signe depuis 2002 des vins cisel\u00e9s. Cet assemblage d\u2019humagne rouge, de syrah et de diolinoir, tir\u00e9 \u00e0 5&rsquo;000 flacons, est typiquement valaisan. Chaque c\u00e9page a \u00e9t\u00e9 vinifi\u00e9 s\u00e9par\u00e9ment en cuve inox, avec doigt\u00e9\u00a0: une note sauvage d\u2019humagne au nez, un beau volume en bouche gr\u00e2ce au diolinoir, et une finale \u00e9pic\u00e9e qui trahit la syrah.<\/p>\n<p>Quand j\u2019ai interrog\u00e9 le vigneron sur le pourquoi de ce nouvel assemblage, il m\u2019a r\u00e9pondu\u00a0: <em>\u00abViens voir les vignes\u00a0!\u00bb<\/em>. D\u00e9part de Sierre pour Saillon, 33 kilom\u00e8tres en aval du Rh\u00f4ne. Puis, on s\u2019est enfonc\u00e9 vers la Salentse et ses gorges. Depuis les Romains, une source d\u2019eau chaude y coule. L\u2019endroit est enchanteur\u00a0: <strong>Gustave Courbet<\/strong>, exil\u00e9 \u00e0 la Tour-de-Peilz (o\u00f9 il mourut en 1877), a croqu\u00e9 sur place le th\u00e8me de sa toile <em>\u00abLa caverne des g\u00e9ants\u00bb<\/em>. Rochers et v\u00e9g\u00e9tation entrem\u00eal\u00e9s dessinent une figure, encore visible, reproduite \u00e0 la pointe s\u00e8che sur l\u2019\u00e9tiquette. Apr\u00e8s ce premier 2015, concentr\u00e9 et puissant, <strong>Robert Taramarcaz<\/strong>\u00a0<em>(ci-dessus devant la fameuse grotte-cascade ch\u00e8re \u00e0 Farinet)<\/em> promet un 2016, \u00e9l\u00e9gant et <em>\u00ab\u00e9tonnant\u00bb<\/em> (vendang\u00e9 le 1<sup>er<\/sup>novembre\u00a0!), tandis que le 2017 approchera la densit\u00e9 du 2015, <em>\u00abmais avec plus d\u2019acidit\u00e9\u00bb<\/em>. Patience\u00a0! M\u00eame si ce <em>\u00abvin de terroir\u00bb<\/em> ne conna\u00eet pas le bois, il s\u2019harmonise en cuve durant plusieurs mois, avant la mise en bouteille\u2026 Quant \u00e0 son g\u00e9niteur, prot\u00e9g\u00e9 des Muses, il a choisi pour devise <em>\u00abun verre de po\u00e9sie\u00bb<\/em>. Il aime rendre hommage aux arts\u00a0: <strong>Courbet,<\/strong> <strong>Rilke<\/strong> et <strong>Cyrano<\/strong>. Quand le vin est si vibrant, le <strong>\u00abstorytelling\u00bb<\/strong> tient lieu de suppl\u00e9ment d\u2019\u00e2me.
