Un 12\/20 donne donc droit \u00e0 une toque, 13 et 14, deux, 15 et 16, trois, 17 et 18, quatre, et les cinq toques sont r\u00e9serv\u00e9es aux 19\/20. Et cette ann\u00e9e, 103 chefs ont obtenu un point de plus, contre 48 qui en perdent un. <strong>Tanja Grandits<\/strong>, remarqu\u00e9e par le guide il y a 14 ans dans une auberge thurgovienne, <strong><a href=\"https:\/\/thomasvino.ch\/?p=11215\">r\u00e9gale les B\u00e2lois depuis dix ans<\/a><\/strong>. A 19\/20 (et 5 toques, donc!), elle rejoint son <em>\u00abvoisin\u00bb<\/em> <a href=\"https:\/\/thomasvino.ch\/?p=13085\"><strong>Peter Knogl<\/strong><\/a>, dans son restaurant de l\u2019H\u00f4tel des Trois-Rois, au bord du Rhin, distingu\u00e9 h\u00f4tel de l\u2019ann\u00e9e, trois \u00e9toiles Michelin, comme le Grison <strong>Andreas Caminada<\/strong> (F\u00fcrstenau) et le Vaudois <strong>Franck Giovannini<\/strong> (H\u00f4tel de Ville \u00e0 Crissier). Mais au lieu de trois Suisses au sommet, ils sont d\u00e9sormais huit chez GM, avec le Genevois <strong>Philippe Chevrier<\/strong> (Satigny), Valaisan <strong>Didier de Courten<\/strong> (Sierre), les Vaudois, p\u00e8re et fils, <strong>Bernard et Guy Ravet<\/strong> (Vufflens-le-Ch\u00e2teau) et le Zurichois <strong>Heiko Nieder<\/strong>.<\/p>\n<h4>L&rsquo;ann\u00e9e des retrait\u00e9s&#8230; et des promus!<\/h4>\n<p>Plusieurs chefs importants de Suisse ont pris leur retraite cette ann\u00e9e\u00a0: <strong>Georges Wenger<\/strong>, au Noirmont, <strong>Carlo Crisci<\/strong>, \u00e0 Cossonay, et les Al\u00e9maniques <strong>Robert Speth<\/strong> et <strong>Peter Moser<\/strong>. Quatre <em>\u00abpromus de l\u2019ann\u00e9e\u00bb<\/em> sont cr\u00e9dit\u00e9s de 18\/20, deux travaillent pour le groupe Giardino, <strong>Stefan Heilemann<\/strong>, \u00e0 Zurich, et <strong>Rolf Flieghauf<\/strong> \u00e0 Ascona et Saint-Moritz. S\u2019y ajoutent <strong>Patrick Mahler<\/strong> \u00e0 Vitznau (Focus, Park H\u00f4tel) et <strong>Mitja Birlo<\/strong> \u00e0 Vals (Hotel 7132). Au Carlton, \u00e0 Saint-Moritz, m\u00eame note pour les Bergamasques <strong>Chicco<\/strong> et <strong>Bobo Cerea<\/strong>.<\/p>\n<p>En Suisse romande, le successeur de <strong>Georges Wenger<\/strong>, l\u2019ancien de Crissier, <strong>J\u00e9r\u00e9my Desbraux<\/strong>, est la <em>\u00abd\u00e9couverte de l\u2019ann\u00e9e\u00bb<\/em>, \u00e0 17\/20, une note qui \u00e9choit aussi \u00e0 <strong>Romain Paillerau<\/strong> dans la tr\u00e8s gru\u00e9rienne Pinte des Mossettes, sur Cerniat (FR). A Fribourg, Le P\u00e9rolles, le nouveau restaurant de <strong>Pierrot Ayer<\/strong>, ouvert cet \u00e9t\u00e9 dans le d\u00e9cor tr\u00e8s classe et insolite de <strong>Mario Botta<\/strong>, est au m\u00eame niveau (17, alors que les Trois-Tours d&rsquo;<strong>Alain B\u00e4chler<\/strong> ont 18). Dans les chefs qui montent, <strong>Giuseppe d\u2019Errico<\/strong>, au restaurant Ornellaia, du nom du fameux domaine viticole de Bolgheri (Toscane), 17\/20, et un point en-dessous (\u00e0 16), <strong>Marc-Henri Mazure<\/strong>, qui a repris l\u2019Auberge de La Tour \u00e0 Tr\u00e9lex, pr\u00e8s de Nyon, apr\u00e8s r\u00e9novation.<\/p>\n<p><em>Au total, 870 restaurants sont r\u00e9pertori\u00e9s dans le guide 2020, en allemand, disponible en libraire. Et pour faire de la place en les \u00e9jectant par le haut, Gault Millau promeut <em>\u00abic\u00f4nes\u00bb<\/em> des gloires confirm\u00e9es du vignoble, comme les Valaisans <strong>Anne-Catherine<\/strong> et <strong>Denis Mercier<\/strong>, \u00e0 Sierre, et les Vaudois <strong>Violaine<\/strong> et <strong>Raymond Paccot<\/strong>, \u00e0 F\u00e9chy. Les deux couples sont membres, avec un de leur vin phare, de la <em><strong>M\u00e9moire des vins suisses (MDVS)<\/strong><\/em> et assurent le passage \u00e0 la nouvelle g\u00e9n\u00e9ration, avec une jeune femme aux commandes, en Valais, <strong>Madeleine<\/strong>, nouvelle pr\u00e9sidente de la MDVS, et \u00e0 F\u00e9chy, <strong>Laura<\/strong>.
