Le g\u00e9n\u00e9ticien de la vigne valaisan <strong>Jos\u00e9 Vouillamoz<\/strong> n\u2019y va pas par quatre sentiers\u00a0: l\u2019arvine est l\u2019<em>\u00aborgueil des c\u00e9pages valaisans, qui donne des vins envo\u00fbtants, complexes, de stature internationale, en secs comme en doux\u00bb<\/em> (dans <a href=\"https:\/\/thomasvino.ch\/?p=14723\"><strong>\u00abC\u00e9pages suisses\u00bb<\/strong><\/a>, chez Favre). Sa surface cultiv\u00e9e dans le Vieux-Pays a quintupl\u00e9 en 25 ans, passant de de 46 ha \u00e0 217 ha (1994-2018).<\/p>\n<p>A Lausanne, j\u2019ai choisi le premier vigneron de la liste. Avec sa stature de lutteur de sumo et sa tonsure de moine tib\u00e9tain, <strong>Alexandre Del\u00e9traz<\/strong> ne passe pas inaper\u00e7u. Dans sa cave, \u00e0 Saillon, le jeune vigneron, originaire de Gen\u00e8ve, vinifie sa onzi\u00e8me vendange. Il a largement mis\u00e9 sur la petite arvine, cultiv\u00e9e sur 1,5 ha de ses 6,5 ha. Il en propose quatre, dont trois <em>\u00abs\u00e8ches\u00bb<\/em>, sans sucre r\u00e9siduel, mais \u00e0 haute teneur d\u2019alcool (14\u00b0) dans le chaud mill\u00e9sime 2018. L\u2019une sur les calcaires de Leytron et de Saillon et deux sur le gneiss de Fully, sur cette veine granitique du massif du Mont-Blanc qui se prolonge sur le coteau droit de la vall\u00e9e du Rh\u00f4ne.<\/p>\n<p>J\u2019ai autant appr\u00e9ci\u00e9 l\u2019assemblage des quatre lieux-dits de Fully que la petite arvine d\u2019une seule terrasse, Les Seyes, \u00e9lev\u00e9e avec doigt\u00e9 dans un grand f\u00fbt de ch\u00eane. Au nez discret de p\u00eache, la premi\u00e8re d\u00e9veloppe un beau volume en bouche, avec du gras, des fruits jaunes et des agrumes, avec une belle persistance gustative pour une finale saline typique du c\u00e9page. <em>\u00abUn v\u00e9ritable vin blanc de table\u00bb<\/em>, comme le qualifie <strong>Edmond Gasser<\/strong>, le jeune sommelier d\u2019<strong>Anne-Sophie Pic<\/strong>, au Beau-Rivage de Lausanne, \u00e9lu <em>\u00abSommelier de l&rsquo;ann\u00e9e 2020\u00bb<\/em> par le Guide GaultMillau Suisse.
