Pr\u00e8s de mille vins d\u00e9gust\u00e9s, les deux tiers \u00e0 l\u2019aveugle, le reste durant des sessions sp\u00e9ciales ou des d\u00e9jeuners et d\u00eeners. Qu\u2019en reste-t-il\u00a0? Quelques tuyaux pour commencer l\u2019ann\u00e9e\u2026<\/strong><\/p>\n<p><em>Par Pierre Thomas<\/em><\/p>\n<p>A Bordeaux, c\u2019est les Crus Class\u00e9s de 1855 et les vins de Graves qui pilotaient l\u2019op\u00e9ration, pour un petit commando de journalistes internationaux, cornaqu\u00e9s par Bernard Burtschy (<a href=\"http:\/\/www.bernardburtschy.com\/\">www.bernardburtschy.com<\/a>). Une tourn\u00e9e \u00ablimit\u00e9e\u00bb \u00e0 la Rive Gauche, Sauternes-Barsac compris.<\/p>\n<p>A Alba, l\u2019invitation \u00e9mane du groupement de l\u2019Albeisa, la bouteille typique des Langhe et du Roero, de style bourguignon, et \u00ablimit\u00e9e\u00bb aux grands nebbiolos DOCG (Barolo, Barbaresco, Roero).<\/p>\n<h3><strong>Deux mill\u00e9simes diff\u00e9rents\u00a0: 16 et 17<\/strong><\/h3>\n<p>A Bordeaux, les 1ers crus re\u00e7oivent les journalistes \u00ab\u00e0 domicile\u00bb, sans d\u00e9gustation \u00e0 l\u2019aveugle, et certains ch\u00e2teaux font de m\u00eame. Le reste des CC 1855 \u00e9taient jug\u00e9s \u00e0 l\u2019aveugle. Et tous les vins \u00e9taient en bouteille, compar\u00e9s sur les mill\u00e9simes 2016 et 2017. Pas de \u00abprimeurs\u00bb, exercice (de haute voltige\u00a0!) qui a lieu l\u2019ann\u00e9e suivant la vendange, sur \u00e9chantillons tir\u00e9s des f\u00fbts qui poursuivront leur \u00e9levage quelques mois encore\u2026<\/p>\n<p>On conna\u00eet les diff\u00e9rences des deux mill\u00e9simes\u00a0: 2016, r\u00e9put\u00e9 grand \u2014\u00a0<em>\u00abil n\u2019a pas de preuve \u00e0 faire\u00bb<\/em>, dit-on \u00e0 Ducru-Beaucaillou \u2014, plus ferme et moins solaire que 2015, un peu comme dans la paire 2009 \u2013 2010, o\u00f9 les premiers se laissent d\u00e9j\u00e0 aborder et les seconds doivent se garder. Quant \u00e0 2017, marqu\u00e9 notamment par le gel dans les parcelles les moins bien situ\u00e9es, il peut \u00eatre rapproch\u00e9 de 2014 \u2014 <em>\u00abplus \u00e9l\u00e9gant que 2011\u00bb<\/em>, dit-on \u00e0 Latour \u2014 avec une d\u00e9finition dite <em>\u00abclassique\u00bb<\/em> de Bordeaux, par opposition \u00e0 des mill\u00e9simes chauds, marqu\u00e9s par des vendanges pr\u00e9coces\u2026\u00a0 On qualifie m\u00eame le 2017 de <em>\u00abcharmeur\u00bb<\/em> \u00e0 Lafite. En attendant 2018, qualifi\u00e9 de mill\u00e9sime <em>\u00abmonstre\u00bb<\/em>\u00a0!<\/p>\n<h3><strong>Les vins que j\u2019ai pr\u00e9f\u00e9r\u00e9s<\/strong><\/h3>\n<p>Cette diff\u00e9rence de mill\u00e9simes fait sinon le charme, du moins l\u2019utilit\u00e9 de la d\u00e9gustation. <em>en 2016<\/em>, Ch. de Myrat, Ch. d\u2019Arche, Lamothe-Guignard.<\/p>\n<p>Et Ch\u00e2teau d\u2019Yquem dans les deux mill\u00e9simes, aux caract\u00e9ristiques proches sur le papier\u00a0: 75% de s\u00e9millon pour 25% de sauvignon, un PH \u00e9gal de 3.8, pour un peu plus de sucre r\u00e9siduel (148 g. contre 135 g., compens\u00e9s par une acidit\u00e9 plus grande dans le 2017 (3.7 contre 3.2), plus complexe, plus riche, plus long que le 2016 tr\u00e8s pur, mais plus lin\u00e9aire.<\/p>\n<p><em>Blancs secs des Graves, j\u2019ai appr\u00e9ci\u00e9\u2026<\/em><\/p>\n<p>En 2017, Carbonnieux, Latour-Martillac, Pape Cl\u00e9ment, Couhins-Lurton, Couhins\u00a0; A Bordeaux, les ch\u00e2teaux et leurs propri\u00e9taires savent recevoir\u00a0: la pression commerciale est \u00e9vacu\u00e9e par le syst\u00e8me de la vente via les n\u00e9gociants de la place de Bordeaux (et les ventes en primeurs).<\/p>\n<h3><strong>Le Pi\u00e9mont et sa hi\u00e9rarchie complexe<\/strong><\/h3>\n<p>Au Pi\u00e9mont, \u00e0 l\u2019image de la Bourgogne, la hi\u00e9rarchie est plus complexe. M\u00eame si les vins sont nombreux (plus de 320 vins servis \u00e0 l\u2019aveugle, par appellation), les producteurs sont limit\u00e9s dans leur choix et ne peuvent pas faire d\u00e9guster tous leurs \u00abcrus\u00bb, les MGA \u00abmentions g\u00e9ographiques ajout\u00e9es\u00bb. Ainsi le bon moment en compagnie des producteurs de Barbaresco <strong>Marco et Vittorio Adriano<\/strong> (appr\u00e9ci\u00e9s dans la d\u00e9gustation \u00e0 l\u2019aveugle, puis remarquable Barbaresco Sanadaive 2010), <strong>Sergio Abrigo<\/strong> (magnifique Dolcetto d\u2019Alba Garbei, taill\u00e9 pour la garde, comme le montrait le 2010\u00a0!), de Barolo <strong>Monchiero<\/strong> et surtout de <strong>Giacomo Fenocchio<\/strong>, et de son successeur <strong>Claudio<\/strong>. Son quatuor de barolos 2016 est remarquable, avec un coup de c\u0153ur pour le Cannubi, dense et gras, tandis que Castellero et Villero sont plus rustiques, le second marqu\u00e9 par un bois\u00e9 plus pr\u00e9sent, et Bussia, enfin, qui est paru plus souple, avec un tr\u00e8s beau 2010 aux tanins serr\u00e9s, sur des ar\u00f4mes de cerise noire et de pruneau. Des vignes cultiv\u00e9es comme du temps de son p\u00e8re, sans herbicides ni pesticides, puis des vins \u00e9labor\u00e9s et \u00e9lev\u00e9s traditionnellement\u00a0: 40 jours de mac\u00e9ration, et trois ans dans des f\u00fbts de Slavonie de 20 \u00e0 30 hl. Depuis 2010, <strong>Claudio<\/strong> a pouss\u00e9 son barolo plus loin avec une Reserva de 90 jours de mac\u00e9ration, puis 4 ans d\u2019\u00e9levage sous bois, produite seulement dans les bons mill\u00e9simes (pas de 2014 et bient\u00f4t le 2015 sur le march\u00e9).
