L\u2019\u00e9tiquette mentionne toutefois <em>\u00abcontient des sulfites\u00bb<\/em>. Pourquoi\u00a0? Parce les levures, m\u00eame quand elles sont \u00abindig\u00e8nes\u00bb, occasionnent, par r\u00e9action chimique, un d\u00e9veloppement spontan\u00e9 de soufre, qu\u2019il faut mentionner \u2014 c\u2019est la loi\u00a0!<\/p>\n<p>Il n\u2019emp\u00eache, ce pinot noir (abr\u00e9g\u00e9 PN) est un pure nature (PN). Son auteur, <strong>Christian Vessaz<\/strong>, talentueux vigneron et \u0153nologue du <strong>domaine de la bourgeoisie de Morat<\/strong>, dans le Vully (FR), me l\u2019a fait go\u00fbter en toute connaissance de cause. Quelle magnifique surprise, certes due au mill\u00e9sime 2018, exceptionnel, notamment pour les rouges. Une telle concentration est rare pour un pinot, r\u00e9colt\u00e9 \u00e0 haute maturit\u00e9, sur les terrasses du domaine. Pourpre profond \u00e0 reflets violac\u00e9s, il exhale des notes de m\u00fbre sauvage\u00a0; l\u2019attaque est puissante, la mati\u00e8re dense et les tanins serr\u00e9s, avec des saveurs de baies noires, de sureau, mais aussi de cerise noire, \u00e0 la chair croquante autour du noyau, avec, pr\u00e9cis\u00e9ment, une note finale bois\u00e9e et \u00e9pic\u00e9e.<\/p>\n<p>Un PN qui ne manque pas d\u2019air\u00a0: le raisin a d\u2019abord mac\u00e9r\u00e9 plusieurs semaines, la seconde fermentation (malolactique) n\u2019est intervenue qu\u2019en \u00e9t\u00e9, gage d\u2019une longue micro-oxyg\u00e9nation du raisin, puis le vin a \u00e9t\u00e9 \u00e9lev\u00e9 en barriques, pour l\u2019assouplir.
