Sa <em>\u00ablaudatio\u00bb<\/em> souligne ses <em>\u00abplats graphiques (qui) jouent avec adresse des associations de saveurs, de couleurs, de textures&nbsp;; une signature unique\u00bb<\/em>.<\/p>\n<p>Ce premier M\u00e9rite salue aussi le jeune <strong>Ale Mordasini<\/strong>, qui a repris le piano du Relais &amp; Ch\u00e2teaux <em>Krone<\/em>, \u00e0 Regensberg (ZH). Et, salu\u00e9e comme une <em>\u00abgrande table\u00bb<\/em> par la r\u00e9cente \u00e9dition 2020-21 du <em>Guide Bleu-La Suisse gourmande<\/em>, la cheffe<strong> Bernadette Lisibach<\/strong>, Lucernoise d\u2019origine, \u00e9tablie dans la campagne saint-galloise, \u00e0 L\u00f6mmenschwil, qui allie la cr\u00e9ation propre et la tradition campagnarde dans sa belle maison et jardin \u00e0 la belle saison, <em>Neue Blumenau<\/em>.<\/p>\n<p><strong>La \u00abTable d&rsquo;Edgard\u00bb, le retrait\u00e9<\/strong><\/p>\n<p>Il ne manquerait \u00e0 ce palmar\u00e8s qu\u2019une mention pour le <em>\u00abretrait\u00e9 de l\u2019ann\u00e9e\u00bb<\/em>, Valaisan de Lausanne, bien connu des Al\u00e9maniques, <strong>Edgard Bovier<\/strong>, rattrap\u00e9 par l\u2019\u00e2ge de l\u2019AVS, au Lausanne-Palace &amp; Spa. Il quittera <em>\u00absa\u00bb<\/em>&nbsp;<em>Table d\u2019Edgard<\/em> en pleine ville de Lausanne, en ce mois de juin 2020, pour le Pays-d\u2019Enhaut, o\u00f9 il retrouvera \u00e0 l\u2019<em>H\u00f4tel de Rougemont<\/em>, <strong>Jean-Jacques Gauer<\/strong>, l\u2019ancien patron du Palace lausannois (avant son rachat par la Fondation de famille Sandoz, propri\u00e9taire du Beau-Rivage \u00e0 Ouchy).<\/p>\n<p>Au Lausanne Palace, le restaurant gastronomique sera repris par le jeune chef fran\u00e7ais <strong>Franck Pelux<\/strong>, 32 ans, fils de restaurateurs d\u2019Autun, et sa compagne <strong>Sarah Benahmed<\/strong>, qui, apr\u00e8s un parcours de P\u00e9kin \u00e0 <em>Top Chef<\/em>, ont tenu durant deux ans (2017-2019), <em>Le Crocodile<\/em>, \u00e0 Strasbourg (une \u00e9toile Michelin).
