Mais, vu ses qualit\u00e9s historiques et organoleptiques, elle devrait se (re)d\u00e9velopper. Le Sierrois Nicolas Zufferey en a notamment plant\u00e9.<\/strong><\/p>\n<p><em>Par Pierre Thomas<\/em><\/p>\n<p>Elle reste, pour l\u2019heure, une raret\u00e9 r\u00e9serv\u00e9e \u00e0 ceux qui l\u2019ont sauv\u00e9e. Enfant naturel de la r\u00e8ze (d\u00e9j\u00e0 cit\u00e9e dans un fameux document anniviard de 1313) et d\u2019un c\u00e9page inconnu, la diolle avait \u00e9t\u00e9 mentionn\u00e9e d\u00e8s 1654, puis r\u00e9f\u00e9renc\u00e9e par le fameux amp\u00e9lographe <strong>Adrien<\/strong>\u00a0<strong>Berget<\/strong>, au d\u00e9but du vingti\u00e8me si\u00e8cle.<\/p>\n<p>Mais on perd la trace de ce c\u00e9page blanc authentiquement valaisan jusqu\u2019en 2007, o\u00f9 feu <strong>Germain H\u00e9ritier<\/strong>, de Savi\u00e8se, la signale \u00e0 Changins (qui l\u2019a dans sa collection de Pully-Caudoz). Quand <strong>Jos\u00e9 Vouillamoz<\/strong> lance un appel \u00e0 la reconnaissance par l\u2019ADN de tout c\u00e9page suisse dispers\u00e9 dans le vignoble, le m\u00eame Savi\u00e9san lui montre ses deux derniers pieds de diolle, dans un mur. Le g\u00e9n\u00e9ticien la replante en 2013 \u00e0 Chamoson. Dans un coffret laqu\u00e9 de blanc, accompagn\u00e9e de deux bandes dessin\u00e9es qui racontent son histoire, la bouteille de diolle 2019 vaut 130 fr.<\/p>\n<h4>Une raret\u00e9 mondiale<\/h4>\n<p>Une paille pour une raret\u00e9 valaisanne, donc mondiale\u00a0! Sa vinification est particuli\u00e8re\u00a0: elle se d\u00e9roule en dame-jeanne, r\u00e9cipient en verre r\u00e9cup\u00e9r\u00e9 par <strong>Didier Joris<\/strong> (et qui a d\u00fb contenir du marc\u2026), et le flacon est obtur\u00e9 par une capsule \u00e0 vis, dont <strong>Jos\u00e9 Vouillamoz<\/strong>, devenu sous-directeur du club DIVO, est un ardent d\u00e9fenseur. <em>\u00abC\u2019est le vin suisse en capsule le plus cher\u00a0!\u00bb\u00a0<\/em>Le raisin blanc \u00e0 peau \u00e9paisse ne conna\u00eet donc ni bois, ni li\u00e8ge.<\/p>\n<p>A l\u2019\u00e9volution, le vin se situe entre le pa\u00efen et la petite arvine, assure le vinificateur. Pour la 2019, titrant 104\u00b0 Oechsl\u00e9, il a fallu trier le raisin, victime de la gr\u00eale. Une mac\u00e9ration pelliculaire a pr\u00e9c\u00e9d\u00e9 la fermentation, spontan\u00e9e, et il n\u2019y a eu qu\u2019un seul soutirage\u2026 Au nez, cette diolle est d\u00e9licatement citronn\u00e9e, avec de fines notes d\u2019orange, en bouche, puissante, grasse, avec une pointe de salinit\u00e9 finale qui la rapproche de la petite arvine, davantage que ses notes d\u2019agrumes. <em>\u00abElle monte en puissance, plut\u00f4t que de filer\u2026\u00bb<\/em> image <strong>Didier Joris<\/strong> et sa persistance aromatique est remarquable. Au point qu\u2019on la verrait volontiers cro\u00eetre et se multiplier en Valais&#8230; Les deux comp\u00e8res ont fait passer la surface de 300 \u00e0 566 m2 en 2019. Mais la diolle ne figure pas (encore\u00a0?) dans la liste des c\u00e9pages autoris\u00e9s en Valais (et en Suisse&#8230;). Elle reste une affaire <em>\u00abexp\u00e9rimentale\u00bb\u00a0<\/em>et son nectar est \u00e9tiquet\u00e9 <em>\u00abvin de table\u00bb. <\/em>Mais\u00a0<strong>Nicolas Zufferey<\/strong>, \u00e0 Sierre, en a toutefois plant\u00e9 200 pieds. Premi\u00e8re r\u00e9colte en 2020\u00a0!
