Avec le retour du <em>\u00abparcellaire\u00bb<\/em>, c\u2019est la r\u00e9habilitation d\u2019<em>\u00abun lieu de petite taille, d\u00e9limit\u00e9 et plant\u00e9 en vignes, identifi\u00e9 au vin qu\u2019il produit\u00bb<\/em>.<\/p>\n<p>Pilot\u00e9 par <strong>Beno\u00eet de Montmollin<\/strong>, 36 ans, ce grand domaine neuch\u00e2telois d\u2019Auvernier propose plusieurs pinots noirs tir\u00e9s de ses 47 hectares. D\u00e8s 2019, les vins sont certifi\u00e9s <em>\u00abbio bourgeon\u00bb\u00a0<\/em>: c\u2019est m\u00eame le plus vaste domaine de Suisse cultiv\u00e9 en bio\u00a0! Une majorit\u00e9 de pinot noir s\u2019\u00e9coule en \u0153il-de-perdrix ros\u00e9. Les rouges sont vinifi\u00e9s en fonction du lieu d\u2019o\u00f9 ils viennent, s\u00e9par\u00e9ment. <em>\u00abOn fait tout ce travail et on ne le met pas en \u00e9vidence\u00bb<\/em>, d\u00e9plore le jeune vigneron, d\u00e9fenseur d\u2019une d\u00e9finition l\u00e9gale des grands crus.<\/p>\n<p><em>Nec plus ultra<\/em> du domaine, ce vin est issu d\u2019une seule parcelle de vieilles vignes de 45 ans. Il passe 24 mois en f\u00fbts de ch\u00eane neufs de chauffe l\u00e9g\u00e8re, pour \u00e9viter la sensation de <em>\u00abtoast\u00e9\u00bb<\/em>. Sur 2017, ce rouge \u00e9clatant est dense, concentr\u00e9, sur des fruits plus noirs que rouges, ample en bouche, puissant, taill\u00e9 pour une garde de dix ans et plus.
