Trahit-il ses origines? A 60 ans, il a d\u00e9cid\u00e9 de s\u2019investir dans un projet n\u00e9, presque, du hasard. Une bouteille de <em>\u00abStimulant\u00bb<\/em> restait chez un de ses amis, ouverte depuis plus d\u2019une dizaine d\u2019ann\u00e9es (la production a cess\u00e9 dans les ann\u00e9es 1970). Malgr\u00e9 l\u2019oxydation du produit, \u00e0 base de vins (du <em>\u00abgros rouge\u00bb<\/em> espagnol&#8230;) et de quinquina, l\u2019\u0153nologue trouve le liquide pas mal du tout.<\/p>\n<p>La <strong>famille Salina<\/strong>, dont le dernier distillateur fut l\u2019ancien syndic de Morges <strong>Xavier Salina<\/strong>, avait conserv\u00e9 les recettes du breuvage, \u00e0 la fois ap\u00e9ritif et digestif. <em>\u00abMoi, je bois du chasselas \u00e0 l\u2019ap\u00e9ritif. Mais j\u2019observe&#8230; Aujourd\u2019hui, sur les terrasses de bistrot, il y a davantage de cocktails multicolores servis dans de gros verres, des piscines\u00bb<\/em>, constate <strong>Raoul Cruchon<\/strong>.<\/p>\n<p><strong>Du chasselas \u00e0 la base<\/strong><\/p>\n<p>Ni une, ni deux, la recette de ce qui est un vermouth, est retravaill\u00e9e. L\u2019ancien ap\u00e9ritif \u00e9tait tr\u00e8s fonc\u00e9, brun\u00e2tre. Invendable aujourd\u2019hui\u00a0! L\u2019astuce pour \u00e9claircir le liquide et le tirer vers le rose <em>\u00abpink\u00bb<\/em>\u00a0? Jouer sur les 80% de vin\u00a0! Non pas sur un c\u00e9page blanc aromatique, mais miser sur le chasselas, neutre, pour 60% de l\u2019assemblage, compl\u00e9t\u00e9 par un gamay-gamaret, pour lui donner de la structure.<\/p>\n<p>A la d\u00e9gustation, c\u2019est moins le vin de base que ce qu\u2019on lui ajoute qui, logiquement, marque les papilles. En l\u2019occurrence, selon la formule du vermouth \u2014 devenu, \u00e0 Turin, une <em>\u00abindication g\u00e9ographique prot\u00e9g\u00e9e\u00bb<\/em> qui f\u00eate en juin ses 30 ans\u00a0! \u2014, un m\u00e9lange d\u2019une quinzaine d\u2019herbes s\u00e9ch\u00e9es, notamment de la gentiane. Celles-ci sont infus\u00e9es dans de l\u2019alcool neutre (\u00e0 94 degr\u00e9s), puis mac\u00e9r\u00e9es une seconde fois, et le marc distill\u00e9 et incorpor\u00e9. Avec cette <em>\u00abstimuline\u00bb<\/em> et le vin de base, on ajoute 80 g\/litre de sucre de betterave suisse (l\u2019alcool devrait provenir \u00e0 l\u2019avenir \u00e9galement de betteraves suisses).<\/p>\n<p>Si, \u00e0 ces plus belles ann\u00e9es, la maison Salina mettait jusqu\u2019\u00e0 80&rsquo;000 litres de son<em> \u00abStimulant\u00bb<\/em> sur le march\u00e9, principalement entre Lausanne et Gen\u00e8ve, le lancement porte sur 15&rsquo;000 bouteilles, soit 10&rsquo;000 litres. Le \u00abbitter\u00bb, titrant 17% d\u2019alcool, peut se boire seul \u2014 <em>\u00abje le consomme en fin de repas, en digestif, comme un \u00abamaro\u00bb\u00bb<\/em>, confie <strong>Raoul Cruchon<\/strong> \u2014 ou en cocktail. Un mixologue lausannois a cr\u00e9\u00e9 une trentaine de mixtures plus ou moins complexes et plusieurs sont en ligne sur le site Internet.<\/p>\n<p>Et ce nom de <em>Le Stim\u2019<\/em>, un avatar de la com\u2019\u00a0? Que nenni\u00a0! Les autorit\u00e9s f\u00e9d\u00e9rales ont communiqu\u00e9 aux repreneurs de la recette que l\u2019injonction de sant\u00e9, \u00ab<em>Le Stimulant\u00bb<\/em>, est proscrite pour l\u2019alcool et le tabac. D\u2019o\u00f9 le diminutif&#8230; La com\u2019 proprement dite tourne autour de l\u2019amertume du produit. <em>\u00abL\u2019amer est \u00e0 la mode\u00a0! Notamment \u00e0 travers les gins\u00bb<\/em>, explique l\u2019associ\u00e9e <strong>Carine Bosson<\/strong>, une commerciale qui conna\u00eet bien le march\u00e9 romand, et qui appuie le projet avec le jeune \u0153nologue <strong>Martin Wagner<\/strong>.<\/p>\n<p>L\u2019ap\u00e9ritif morgien ne sera pas propos\u00e9 en direct, mais par des revendeurs et leur circuit, m\u00eame si sa promotion se fera, notamment dans les bars, caf\u00e9s et restaurants, par la <em>S\u00e0rl Le Stimulant<\/em>.<\/p>\n<p>Et pour paraphraser <strong>Renaud<\/strong>, <em>\u00abC\u2019est pas l\u2019amer qui prend l\u2019homme, mais l\u2019homme qui prend l\u2019amer\u00bb<\/em>&#8230; Entre autres jeux de mots d\u00e9j\u00e0 stimul\u00e9s par ce breuvage qui affiche sur l\u2019\u00e9tiquette et le packaging, un \u00e9l\u00e9gant n\u0153ud papillon rouge stylis\u00e9 et modernis\u00e9.
