Quatri\u00e8me de Suisse par la surface, derri\u00e8re Valais, Vaud et Gen\u00e8ve, le Tessin affiche 90% de son vignoble en c\u00e9pages rouges (990 ha) pour 10% en blanc (110 ha). Mais la vendange, elle, totalise, 67% de rouge seulement pour 33% de blanc, en 2020. L\u2019explication\u00a0? Pr\u00e8s d\u2019un quart du merlot, plant\u00e9 sur 889 ha, est vinifi\u00e9 en <em>\u00abmerlot bianco Ticino DOC\u00bb<\/em>, une sp\u00e9cialit\u00e9 tessinoise qui f\u00eate cette ann\u00e9e ses 35 ans&#8230;<\/strong><\/p>\n<p><em>Par Pierre Thomas (textes et photos)<\/em><\/p>\n<p>Ce merlot vinifi\u00e9 en blanc est une curiosit\u00e9 \u0153nologique. Elle est attribu\u00e9e au directeur technique de la CAGI (ex-coop\u00e9rative de Giubiasco), feu <strong>Adriano Petralli<\/strong>. Trop t\u00f4t disparu en 2015, l\u2019ing\u00e9nieur \u0153nologue form\u00e9 \u00e0 Changins eut l\u2019id\u00e9e de vinifier une partie de la vendange en blanc, quand les vins rouges tessinois connaissaient une grave m\u00e9vente, en 1986.<\/p>\n<p>Mais le merlot, \u00e0 la peau bleut\u00e9e et fine, colore rapidement ce \u00abblanc de noir\u00bb, d\u00e9j\u00e0 au pressurage, m\u00eame si la mac\u00e9ration est r\u00e9duite. Il fallut trouver une astuce\u00a0: utiliser du charbon actif. Le produit est connu dans les caves, o\u00f9 il est soumis \u00e0 autorisation, pour \u00e9liminer divers d\u00e9fauts de vinification\u00a0: corriger la couleur des blancs, mais aussi le v\u00e9g\u00e9tal ou le moisi. Le charbon intervient donc sur le go\u00fbt et le \u00abmerlot bianco\u00bb est neutre. Plusieurs producteurs tessinois proposent des vins tir\u00e9s de c\u00e9pages r\u00e9sistants, les piwis.<\/strong><\/p>\n<p>Dans ce climat \u00e0 la fois tr\u00e8s ensoleill\u00e9 (par an, plus de 2000 heures de soleil) et tr\u00e8s humide (par an, plus de 2000 mm de pluie), le merlot a conquis une place sans partage. Au point que les autres c\u00e9pages rouges sont inf\u00e9rieurs en surface aux blancs, qui connaissent un regain de succ\u00e8s. Il y eut d\u2019abord le chardonnay et le sauvignon blanc\u00a0: pour les deux, le Tessin figure au troisi\u00e8me rang en surface, derri\u00e8re le Valais et Gen\u00e8ve, juste devant Vaud.<\/p>\n<p>Aujourd\u2019hui, ce sont les <em>\u00abpiwi\u00bb<\/em> (abr\u00e9viation allemande, pour les c\u00e9pages r\u00e9sistants aux champignons de la vigne) qui sont dans le vent. En t\u00eate, le johanniter (6 ha), devant le souvignier gris (2 ha), le muscaris (2 ha) et le sauvignac (VB Cal 6-04) sur 1,7 ha. S\u2019ajoute, de l\u2019ancienne g\u00e9n\u00e9ration, le solaris (2,5 ha). Riche en sucre et tr\u00e8s pr\u00e9coce, ce dernier convient \u00e0 des vins doux (comme l\u2019\u00e9labore <strong>Cristina Monico, Fattoria Moncucchetto<\/strong>) ou demi-doux, tel le <em>\u00abNone\u00bb<\/em> des <strong>fr\u00e8res Bianchi<\/strong>, vinifi\u00e9 en barriques, \u00e0 la fois dense, vif et fum\u00e9. Ce petit domaine familial de 5,5 ha est un pionnier de Bio Suisse, depuis 1998\u00a0: le jeune \u0153nologue<strong> Gabriele Bianchi<\/strong> en pr\u00e9side depuis ce printemps la section tessinoise (toutes branches agricoles confondues).<\/p>\n<p>Le johanniter a aussi les faveurs de <strong>Valentina Tamborini<\/strong>. La trentenaire, fille de Claudio, veut donner une orientation r\u00e9solument <em>\u00abdurable\u00bb<\/em> \u00e0 la v\u00e9n\u00e9rable maison du nord de Lugano. Elle proposait d\u00e9j\u00e0 son <em>\u00abVivi\u00bb<\/em>, un johanniter \u00e9lev\u00e9 en barrique, et elle a lanc\u00e9 pour la premi\u00e8re fois ce printemps, sous des \u00e9tiquettes color\u00e9es, la ligne\u00a0<em>\u00abLa Rinascita\u00bb<\/em>, cinq vins de \u00abpiwis\u00bb tir\u00e9s de 2 hectares au <strong>domaine de Vallombrosa<\/strong>. Ainsi <strong>Meinrad Perler\u00a0<\/strong><em>(photo)<\/em> \u00e0 <strong>Agriloro<\/strong>, dans le Mendrisiotto. Il cultive d\u00e9j\u00e0 18% de blanc sur ses 22 hectares\u00a0: <em>\u00abJe veux arriver \u00e0 40%\u00bb<\/em>, lance cet octog\u00e9naire, \u00e0 qui on avait conseill\u00e9, il y a trente ans, de planter du&#8230; chasselas, rapidement surgreff\u00e9, tant il \u00e9tait peu adapt\u00e9 au climat du Sud des Alpes. Son vin le plus vendu est le <em>\u00abGranito\u00bb<\/em>, compos\u00e9 de 40% de chardonnay, 30% de pinot blanc, 20% de sauvignon et 10% de pinot gris, qui passe une dizaine de mois en f\u00fbts de 500 litres. Perler offre d\u00e9sormais une alternative aux blancs bois\u00e9s: un chardonnay, un pinot blanc, et, depuis cette ann\u00e9e, un gewurztraminer, vinifi\u00e9s en grosses jarres (<em>\u00abamphores\u00bb<\/em>) de terre cuite de 1700 litres.<\/p>\n<p>L\u2019assemblage, c\u2019est aussi la voie suivie par <strong>Gialdi<\/strong>, \u00e0 Mendrisio. Son r\u00e9cent <strong>\u00abSassi Grossi bianco\u00bb<\/strong>, pendant du merlot du Sopraceneri, valeur s\u00fbre inscrite \u00e0 la <em><strong>M\u00e9moire des vins suisses<\/strong><\/em>, est un assemblage \u00e0 majorit\u00e9 de chardonnay, avec un peu de sauvignon et du pinot noir vinifi\u00e9 en blanc, ferment\u00e9 en barriques neuves, sans malo<span style=\"text-decoration: line-through;\">, <\/span>puis \u00abaffin\u00e9\u00bb en jarre de gr\u00e8s, pour un vin sur les agrumes et la vivacit\u00e9, d\u2019un bon volume en bouche. Quant \u00e0 la <strong>Cantina Monti<\/strong>, elle vient de remporter une des 79 grandes m\u00e9dailles d\u2019or du <em><strong>Frankfurt International Trophy<\/strong><\/em> avec son <em>\u00abMalcantone Bianco di Cademario\u00bb<\/em> 2019, assemblage de 55% de M\u00fcller-Thurgau, 30% de chardonnay et 15% de pinot gris, un vin gras, aromatique (litchi), marqu\u00e9 par l\u2019\u00e9levage et le b\u00e2tonnage des lies neuf mois en barriques.<\/p>\n<p>Les Tessinois aiment combiner les c\u00e9pages et <em>\u00abconstruire\u00bb<\/em> leurs vins. Elevage \u00e0 l\u2019appui, le <em>\u00abmerlot bianco\u00bb<\/em> fait de la r\u00e9sistance. Plusieurs producteurs en proposent une version \u00abluxueuse\u00bb.
