Ce domaine de 5 hectares, sur les hauts d\u2019Auvernier a pris le nom d\u2019un outil de tonnelier, ce <em>\u00abbouvet-jabloir\u00bb<\/em> qu\u2019utilisait le grand-p\u00e8re des fr\u00e8res <strong>Alexandre<\/strong> et <strong>Dimitri Colomb<\/strong>. Ils ne manquent pas de dynamisme\u00a0: l\u2019ann\u00e9e est rythm\u00e9e par les sorties de cuv\u00e9es, annonc\u00e9es sur les r\u00e9seaux sociaux. Ce deuxi\u00e8me mill\u00e9sime de <em>L\u2019Estival<\/em> risque donc d\u2019\u00eatre \u00e9puis\u00e9, m\u00eame en magnum&#8230; et vous devrez vous rabattre sur l\u2019\u0153il-de-perdrix, plus classique, f\u00fbt-il en pot de 50 cl.. Mais le prix est identique pour l\u2019\u00e9l\u00e9gant flacon de 75 cl de l\u2019un ou l\u2019autre vin, tir\u00e9s \u00e0 100% d\u2019une m\u00eame parcelle de pinot noir de jeunes vignes, <em>\u00abLe champ du four\u00bb<\/em>, <em>\u00abparce qu\u2019il y fait tr\u00e8s chaud l\u2019\u00e9t\u00e9\u00bb<\/em>. Si <em>L\u2019Estival<\/em> est plus p\u00e2le, avec un reflet orang\u00e9 plus discret, c\u2019est parce que les peaux du pinot n\u2019ont \u00e9t\u00e9 en contact avec le jus (blanc) que durant quatre heures, contre douze de mac\u00e9ration pour le classique, avant pressurage <em>(et j&rsquo;ai bien appr\u00e9ci\u00e9 cet \u0153il-de-perdrix plus traditionnel!)<\/em><\/p>\n<p><em>L\u2019Estival<\/em>, \u00e0 l\u2019attaque techno banane-litchi-rhubarbe, correspond \u00e0 la d\u00e9finition du ros\u00e9 des <em>\u00absond\u00e9s\u00bb<\/em> de Changins\u00a0: <em>\u00absimple, l\u00e9ger, fun et festif, qu\u2019on ne consomme que l\u2019\u00e9t\u00e9\u00bb<\/em>. Avec un gla\u00e7on, une feuille de menthe, ou des petits fruits rouges?
