Nous aussi&#8230;<\/strong><\/p>\n<p><em>Par Pierre Thomas, texte et photos<\/em><\/p>\n<p><em>\u00abQue\u00bb<\/em> 700 ans? Les Grisons font remonter ce <em>\u00abvin des complies\u00bb<\/em> avant l\u2019an mille, \u00e0 926. Mais il n\u2019y a pas de trace du nom du c\u00e9page, orphelin, comme le chasselas, de p\u00e8re et de m\u00e8re, selon les plus r\u00e9centes recherches ADN, avant un \u00e9crit de 1321 retrouv\u00e9 dans les archives de l\u2019\u00e9v\u00each\u00e9 de Coire. En Valais, le <strong>Dr Vouillamoz<\/strong> avait d\u00e9j\u00e0 fait le coup avec un registre anniviard de 1313, qui \u00e9voque la r\u00e8ze et l\u2019humagne.<\/p>\n<p>Le completer est plant\u00e9 dans la B\u00fcndnerherrschaft grisonne, sur une surface croissante, d\u2019un peu moins de 6 ha. Le Valais (1,19 ha), le Tessin (0,96 ha) et Zurich (0,41 ha) en comptent aussi. Et le scientifique, qui est aussi le sous-directeur du Club DIVO, en a fait d\u00e9guster 25 de producteurs vari\u00e9s, chez les von Tscharner, p\u00e8re et fils, vignerons-ch\u00e2telains de Reichenau, le jour-m\u00eame du 700<sup>\u00e8me<\/sup> anniversaire. Les facteurs culturaux (s\u00e9lection massale des ceps, porte-greffe, exposition du vignoble, rendement de la vigne) et humains influent grandement sur le style. La <em>M\u00e9moire des vins suisses<\/em> conserve, dans son tr\u00e9sor, deux exemples, accept\u00e9s en 2009 et 2008, tir\u00e9s du nord et du sud de la B\u00fcndnerherrschaft, l\u2019un de Roman Hermann, \u00e0 Fl\u00e4sch, l\u2019autre de Martin Donatsch, \u00e0 Malans <em>(ces deux vins figurent dans <a href=\"https:\/\/www.amazon.fr\/111-Vins-suisses-pas-manquer\/dp\/3740812915\/ref=sr_1_1?__mk_fr_FR=\u00c5M\u00c5\u017d\u00d5\u00d1&amp;crid=1T8QPFOSXRPLR&amp;keywords=111+vins+suisses+\u00e0+ne+pas+manquer&amp;qid=1636710737&amp;sprefix=111+vins+%2Caps%2C170&amp;sr=8-1\"><strong>\u00ab111 vins suisses \u00e0 ne pas manquer\u00bb<\/strong><\/a>)<\/em>. Les deux ont affin\u00e9 leur vinification. Le jeune Roman Hermann propose trois vins \u00e0 partir du c\u00e9page, dont une version r\u00e9ductive, \u00e9lev\u00e9e en barriques de ch\u00eane suisse. Les versions modernes garderont-elles ces caract\u00e9ristiques\u00a0? Les seuls \u00abvieux vins\u00bb existants sont ceux de Gian-Battista von Tscharner, d\u2019une vigne \u00e0 Jenins, \u00e9lev\u00e9 plusieurs ann\u00e9es en f\u00fbts de ch\u00eane, et ceux d\u2019Adolf, puis de Giani Boner, \u00e0 Malans, de la bien-nomm\u00e9e Completer Kellerei. Des raret\u00e9s absolues\u00a0! L\u2019oxydation m\u00e9nag\u00e9e \u2014 en-de\u00e7a toutefois de celle du \u00abvin jaune\u00bb du Jura fran\u00e7ais \u2014 permet au completer de scintiller sur ses ar\u00f4mes tertiaires, comme le 2000 de Boner, le 2003 (puis le 2010) de Thomas Studach et, dans des mill\u00e9simes plus anciens encore, le 1988 et le 1990 de von Tscharner. Deux vins qui pr\u00e9sentaient une aromatique oppos\u00e9e\u00a0: le 1988, riche, suave, sur des notes de citron confit, de nougat, et le 1990, \u00e0 l\u2019acidit\u00e9 encore fra\u00eeche, rapicolante, sur l\u2019orange confite et un l\u00e9ger safran.<\/p>\n<p><strong>Des Valaisans prometteurs<\/strong><\/p>\n<p>Dans les vins plus jeunes, les trois exemples valaisans, l\u2019un de la premi\u00e8re et unique barrique de 2014 du Clos de Tsampehro, presque goudronn\u00e9, b\u00e2ti sur l\u2019acidit\u00e9\u00a0; le 2019 de Marie-Th\u00e9r\u00e8se Chappaz, qui n\u2019avait pas encore \u00abdig\u00e9r\u00e9\u00bb son bois\u00e9 vanill\u00e9\u00a0; et le tr\u00e8s beau 2020 de Valentina Andrei, sec et puissant, ample, avec un retour sur du fruit et une note saline finale, montraient le potentiel du c\u00e9page en Valais, o\u00f9 il est en concurrence avec la r\u00e8ze, voire la diolle ressuscit\u00e9e par le m\u00eame Dr Vouillamoz. M\u00eame s\u2019il paraissait plus facile d\u2019acc\u00e8s, mais frais et tendu, le 2019 de la coop\u00e9rative Volg \u00e9tait tr\u00e8s agr\u00e9able, comme la version \u00abde base\u00bb de Roman Hermann et le \u00abclassique\u00bb de Martin Donatsch, bien construit. Ou l\u2019\u00e9tonnant 2018 de Christian Obrecht, qui vient d\u2019inaugurer une cave o\u00f9 le completer est \u00e9lev\u00e9 dans des jarres ovo\u00efdes de gr\u00e8s, \u00e0 la limite du \u00abvin orange\u00bb. Ou le prometteur 2016 de Peter Wegelin, domaine repris par le jeune couple d\u2019\u0153nologues Rafael et Mathilde Hug. Sans omettre l\u2019exercice iconoclaste de la cuv\u00e9e \u00abMagnificients X\u00bb, sign\u00e9e Nicolas W\u00fcst\u00a0: un assemblage de six mill\u00e9simes (2010 \u00e0 2016, dont tout le 2013, soit&#8230; 130 litres), harmonis\u00e9s six mois en f\u00fbts, chez les von Tscharner. Pr\u00e9sent en Valais, il a \u00abenfant\u00e9\u00bb, en 1627, par croisement, naturel inexpliqu\u00e9 \u00e0 ce jour, avec l\u2019humagne blanche, le lafnetscha, dans la r\u00e9gion de Vi\u00e8ge. L\u00e0 o\u00f9 subsistent encore quelques pieds de \u00abvrai\u00bb completer, d\u00fbment pr\u00e9serv\u00e9s par l\u2019association Vitis Alpina, que pr\u00e9side Jos\u00e9 Vouillamoz. Toujours lui\u00a0! <em>(4962 signes, avec titraille, chapeau et intertitre)<\/em><\/p>\n<p><strong>L\u2019exemple du \u00abrush\u00bb du timorasso <em>(un encadr\u00e9 hors texte\u00a0?)<\/em><\/strong><\/p>\n<p>Cet engouement tout relatif pour le completer n\u2019a rien \u00e0 voir avec le <em>\u00abrush\u00bb<\/em> enregistr\u00e9 dans le Pi\u00e9mont par le timorasso, \u00e9voqu\u00e9 en 1209 dans un document en latin, \u00e0 Tortona. Sous l\u2019impulsion de grands op\u00e9rateurs du Pi\u00e9mont (comme <strong>Vietti<\/strong>, <strong>Borgogno<\/strong> ou <strong>Marina Coppi<\/strong>, la r\u00e9gionale de l\u2019\u00e9tape, ni\u00e8ce de <strong>Fausto<\/strong>, le <em>\u00abcampionissimo\u00bb<\/em> cycliste), les <em>Colli Tortonesi Timorasso DOC Derthona<\/em> (nom latin de Tortona) ont \u00e9t\u00e9 multipli\u00e9es par dix, sur pr\u00e8s de 200 ha, en vingt ans! Apr\u00e8s les productifs et neutres arneis (Roero) et cortese (Gavi), les Pi\u00e9montais sont \u00e0 la recherche d\u2019un blanc plus <em>\u00abs\u00e9rieux\u00bb<\/em>. De fait, le timorasso vieillit admirablement, d\u00e9veloppant des notes p\u00e9trol\u00e9es se rapprochant de celles du riesling, sur une mati\u00e8re dense et ample. Comme un completer du Sud des Alpes\u00a0!<\/p>\n<p><em>V.O.
