Il y a 60 ans\u00a0! Et il lui a fallu 30 ans, \u00e0 ce <em>\u00abnouveau c\u00e9page\u00bb<\/em>, pour \u00eatre agr\u00e9\u00e9 en appellation d\u2019origine contr\u00f4l\u00e9e (AOC) du Languedoc. Cette ann\u00e9e (2021), il fait son entr\u00e9e dans les c\u00e9pages <em>\u00ab\u00e0 fin d\u2019adaptation\u00bb<\/em> dans les AOC Bordeauxs et Bordeaux sup\u00e9rieur, \u00e0 la condition de ne pas \u00eatre mentionn\u00e9 sur l\u2019\u00e9tiquette et de ne pas d\u00e9passer 10% de l\u2019assemblage. Il y a \u00e9t\u00e9 introduit il y a pile 20 ans, au <strong>Domaine franco-chinois<\/strong>, dans le Hebei. Le professeur <strong>Li Demey<\/strong> l\u2019a vinifi\u00e9 pour la premi\u00e8re fois en 2003, qui fut, en Chine aussi, un mill\u00e9sime chaud et sec. R\u00e9sistant \u00e0 la coulure, au mildiou et \u00e0 la pourriture grise, le marselan fait merveille les ann\u00e9es pluvieuses et froides, pour arrondir des cabernets sauvignons aux tanins durs et verts.<\/p>\n<p>De la mati\u00e8re, le marselan, aux grappes l\u00e2ches et aux petits raisins \u00e0 peau \u00e9paisse, n\u2019en manque pas. <em>\u00abA la C\u00f4te et au Chablais, il m\u00fbrit un peu avant la syrah, souvent \u00e0 gros grains. Et ses ar\u00f4mes lui ressemblent&#8230;\u00bb<\/em>, explique <strong>Charles Rolaz<\/strong>, le patron de Hammel. En 2018, mill\u00e9sime solaire, ce vin rouge puissant et ch\u00e2toyant, offre des ar\u00f4mes \u00e9pic\u00e9s (poivre, coriandre), sur une mati\u00e8re ample aux tanins d\u00e9j\u00e0 fondus.<\/p>\n<p>Des M, <strong>Hammel<\/strong> les aligne, et pas seulement dans son nom\u00a0: M comme malbec, marselan ou merlot. Trois rouges structur\u00e9s, vinifi\u00e9s purs, en barriques. Et cultiv\u00e9s sur les domaines vaudois de la maison rolloise.
