Cette bouteille, orn\u00e9e d\u2019une belle \u00e9tiquette du peintre sierrois <strong>Pierre Zufferey<\/strong>, est sign\u00e9e <strong>Gautier-Cholet-Favre<\/strong>.<\/p>\n<p><em><strong>Par<\/strong> <strong>Pierre Thomas<\/strong><\/em><\/p>\n<p>Un trio qui est impliqu\u00e9 de A \u00e0 Z dans l\u2019aventure, commenc\u00e9e en 2016. Les deux premiers sont sommeliers&nbsp;: <strong>Fran\u00e7ois Gautier<\/strong> est devenu directeur-associ\u00e9 de La Fleur de Sel, \u00e0 Cossonay, et <strong>St\u00e9phane Cholet<\/strong>, \u00e0 La C\u00e8ne, \u00e0 Fribourg, deux excellentes adresses bistronomiques. Ils s\u2019efforcent de participer aux travaux de la vigne et de la cave, de la taille \u00e0 la mise en bouteille, m\u00eame si le <em>\u00abpro\u00bb<\/em> c\u2019est <strong>Duke<\/strong>, surnom de Jonathan. Le trio discute des cuv\u00e9es, car ce qui avait d\u00e9but\u00e9 par un <em>\u00abone shot\u00bb<\/em>, est devenu une ligne&nbsp;: le cornalin, rev\u00eache, a d\u00fb \u00eatre assembl\u00e9 \u00e0 du cabernet franc et du merlot dans le num\u00e9ro un (2016), le no 2 (2019) \u00e9tait une petite arvine mac\u00e9r\u00e9e en \u00abvin orange\u00bb, le no 3 (2020) est celui-ci, et le no 4 (2021), un pur cabernet franc, attend sagement dans ses deux barriques&#8230;<\/p>\n<p>Avec lui, ce sera un retour aux sources pour les deux sommeliers lig\u00e9riens \u2014 d\u2019o\u00f9 l\u2019\u00e9tiquette, <em>\u00abentre 2 vall\u00e9es\u00bb<\/em>, celle de la Loire et le Valais. Le 2020 est donc un blanc, en cuve, que d\u00e9crit <strong>Fran\u00e7ois Gautier&nbsp;<\/strong>: <em>\u00abSur une attaque franche et fruit\u00e9e, les trois c\u00e9pages, reconnaissables, apportent chacun quelque chose&nbsp;: la petite arvine (40%), des notes de pamplemousse, le chasselas (40%), de la tension, et le johannisberg (20%), de beaux amers en finale\u00bb.<\/em><\/p>\n<p>Bu, et approuv\u00e9! Les trois comp\u00e8res se sont pris au jeu&nbsp;: cet assemblage blanc a \u00e9t\u00e9 tir\u00e9 \u00e0 800 bouteilles, et il y aura autant de cabernet franc 2021.
