Le D\u00e9zaley doit rester ultratraditionnel\u00bb<\/em>, constate <strong>Basile Monachon<\/strong>. Pour celui qui est aussi le pr\u00e9sident des vignerons de Lavaux: <em>\u00abOn est au pied du mur. Le chasselas plaisait \u00e0 la g\u00e9n\u00e9ration d\u2019apr\u00e8s-guerre et le faisceau des consommateurs de D\u00e9zaley se r\u00e9duit. La culture gastronomique favorise le vin rouge \u00e0 table. Chez moi, ce sont les rouges qui me font vendre les vins blancs\u00a0!\u00bb. \u00abIci, on fait le meilleur chasselas du monde, ce serait dommage de voler de la terre pour planter des c\u00e9pages r\u00e9sistants. Le r\u00e9chauffement climatique nous permet d\u2019\u00e9viter la chaptalisation et de supprimer la fermentation malolactique, mais on devra pouvoir irriguer les vignes\u00bb<\/em>, explique <strong>Titouan Briaux Chaudet<\/strong>, le fils de la nouvelle pr\u00e9sidente de La Baronnie, l\u2019\u00e9lite autoproclam\u00e9e de douze producteurs de D\u00e9zaley. <strong>V\u00e9ronique Briaux Claudet<\/strong> a succ\u00e9d\u00e9 \u00e0 <strong>Luc Massy<\/strong>, qui devrait passer les r\u00eanes de son domaine \u00e0 ses fils, <strong>Gregory<\/strong> et <strong>Benjamin.<\/strong> Ce dernier constate que le D\u00e9zaley, pour vivre, a besoin d\u2019autre chose que des\u00a0<em>\u00abtouristes-photos\u00bb<\/em>, mais bien de clients.<\/p>\n<p style=\"font-weight: 400;\"><strong>Une minorit\u00e9 de \u00abpetits\u00bb jeunes<\/strong><\/p>\n<p style=\"font-weight: 400;\">Avec ses 54 hectares class\u00e9s en AOC Grand Cru, de haute lutte depuis 2013, \u00e0 l\u2019\u00e9gal de son petit voisin le Calamin, le D\u00e9zaley se r\u00e9partit en une centaine de propri\u00e9taires et se vend sous 65 marques ou \u00e9tiquettes diff\u00e9rentes&#8230; La douzaine de jeunes, avec un petit tiers de femmes, reste donc minoritaire. Manquent \u00e0 l\u2019appel les plus gros producteurs, ceux qui livrent \u00e0 la grande distribution \u00e0 prix cass\u00e9s \u2014 oui, \u00e7a existe\u00a0! Tandis que le Lavaux-Vinorama, au pied du coteau sublime du D\u00e9zaley, vend 35&rsquo;000 bouteilles aux touristes, le Lavaux Wine Bar, ouvert \u00e0 New-York en 2020 par lui et l\u2019ex-coop\u00e9rative de Lutry, en \u00e9coule la moiti\u00e9, mais \u00e0 des prix qui font r\u00eaver\u00a0: 54 dollars un Lutry servi avec une fondue \u00e0 table et plus du double, 135 dollars, pour un D\u00e9zaley. Le bouillant entrepreneur n\u2019h\u00e9site pas \u00e0 d\u00e9cr\u00e9ter que le <em>\u00abD\u00e9zaley n\u2019est pas ad\u00e9quat pour faire du vin bio\u00bb<\/em>.<\/p>\n<p style=\"font-weight: 400;\">Ce qui n\u2019emp\u00eache pas plusieurs producteurs d\u2019adh\u00e9rer au tout neuf <em>\u00abr\u00e9seau \u00e9cologique\u00bb<\/em> qui a r\u00e9ussi \u00e0 sensibiliser 60 domaines, et 370 hectares soit 60% du vignoble, pour rendre \u00abLavaux plus vert\u00bb, en choisissant, d\u00e8s mars prochain, des crit\u00e8res de viticulture dans un porte-feuille encourageant la biodiversit\u00e9.<\/p>\n<p style=\"font-weight: 400;\">La nouvelle g\u00e9n\u00e9ration ne tuera pas cette poule aux \u0153ufs d\u2019or, encore peu ambitieuse&#8230; Car, comme le constate le nouveau gestionnaire du site <em>\u00abLavaux patrimoine mondial\u00bb<\/em>, <strong>Vincent Bailly<\/strong> : <em>\u00abC\u2019est le vignoble qui est inscrit depuis 15 ans \u00e0 l\u2019UNESCO, pas son esth\u00e9tique.\u00bb<\/em><\/p>\n<p style=\"font-weight: 400;\">Le soleil avait chass\u00e9 l\u2019orage et sur ces bons mots, il \u00e9tait temps d\u2019aller boire un verre\u00a0: de \u00ab<em>vieux chasselas\u00bb<\/em> de chaque ann\u00e9e de naissance des <em>\u00abjeunes\u00bb<\/em> pr\u00e9sents.
