Et, contrairement au beaujolais nouveau (qui sort quelques semaines apr\u00e8s les vendanges, en novembre), c\u2019est un vin fini, auquel les lies en suspension assurent une long\u00e9vit\u00e9 \u00e9tonnante. <em>\u00abJe fais mon choix \u00e0 la cave. Pour le non filtr\u00e9, je prends la cuve qui me para\u00eet la plus expressive en ar\u00f4mes. Le 2022, avec ses notes de fleur de sureau et d\u2019agrumes est plus gras, mais aussi plus trouble, que d\u2019autres mill\u00e9simes\u00a0!\u00bb<\/em>, se r\u00e9jouit <strong>Elodie Kuntzer<\/strong>. Les Kuntzer en ont 5 ha, soit un quart du domaine. <em>\u00abC\u2019est un c\u00e9page noble. Il peut donner de grands vins. On peut le vinifier de diverses fa\u00e7ons et j\u2019ai l\u2019impression qu\u2019il a plus la cote qu\u2019il y a dix ans\u00bb<\/em>, argumente la jeune \u0153nologue. Le passage \u00e0 la biodynamie, d\u00e8s 2012, lui a \u00e9t\u00e9 b\u00e9n\u00e9fique\u00a0: <em>\u00abIl a une meilleure structure, son acidit\u00e9 subjective est plus vive et il para\u00eet plus long en bouche, plus min\u00e9ral\u00bb<\/em>. Et notamment parce que le respect du label demeter (obtenu en 2015) exclut des produits de correction en cave.<\/p>\n<p style=\"font-weight: 400;\">Outre le non filtr\u00e9 (5000 litres) et la S\u00e9lection (trois fois plus), le Domaine Saint-S\u00e9baste propose un chasselas Vieilles Vignes (de plus de 40 ans), ferment\u00e9 en grappes enti\u00e8res et vinifi\u00e9 depuis quatre ans\u00a0en <em>\u00abamphores\u00bb<\/em>, d\u2019un beau potentiel d\u2019\u00e9volution.
