On en a retrouv\u00e9 un, Axel Vacheron, \u00e0 peine 30 ans, dans ses vignes, au Sud de la France.<\/b><\/p>\n<p><em>Par Pierre Thomas<\/em><\/p>\n<\/div>\n<div>\n<p>Pour les Valaisans, le parcours est connu\u00a0: l\u2019\u00e9cole d\u2019agriculture de Ch\u00e2teauneuf puis Changins. Mais, l\u00e0, c\u2019est de Ch\u00e2teauneuf&#8230;du-Pape qu\u2019il est question&#8230; <strong>Axel Vacheron<\/strong> <em>(au centre de la photo)<\/em> est retourn\u00e9 sur ses terres vauclusiennes, rejoindre sa s\u0153ur <strong>Marilou<\/strong> et son compagnon, <strong>Antoine Robert <\/strong><em>(\u00e0 gauche)<\/em>. Et puis, l\u2019opportunit\u00e9 de reprendre tout un domaine, proche du n\u00f4tre, s\u2019est pr\u00e9sent\u00e9e\u00a0: une occasion unique\u00a0!\u00bb<\/em>, explique Axel, 29 ans. Avec, d\u00e9j\u00e0, 45 hectares en c\u00f4tes-du-rh\u00f4ne et 9 ha en ch\u00e2teauneuf-du-pape, la famille avait pens\u00e9 d\u2019abord int\u00e9grer le produit des nouvelles vignes dans l\u2019assortiment existant du Clos du Caillou, soit un apport de 7 ha en ch\u00e2teauneuf et une dizaine en c\u00f4tes-du-rh\u00f4ne. Pourtant, d\u00e8s le premier mill\u00e9sime, l\u2019opulent 2020, vinifi\u00e9 dans les caves du Clos du Caillou, ce fut une \u00e9vidence: <em>\u00abLes terroirs ne sont pas les m\u00eames. Les vins ont choisi tout seul. On n\u2019a pas eu besoin de chercher \u00e0 les diff\u00e9rencier\u00a0!\u00bb<\/em>, dit Axel.<\/p>\n<\/div>\n<div>\n<p>Le Domaine de Panisse est ainsi devenu le projet de la nouvelle g\u00e9n\u00e9ration. Il est vendu sous sa propre \u00e9tiquette\u00a0: un seul assemblage rouge de ch\u00e2teauneuf, <em><strong>Le Mas<\/strong><\/em>, \u00e0 majorit\u00e9 de grenache, compl\u00e9t\u00e9 par de la syrah, du mourv\u00e8dre et du vieux cinsault, et un c\u00f4tes-du-rh\u00f4ne, <em><strong>Le Mazet<\/strong><\/em>, fait de grenache et de syrah. Le Clos du Caillou, qui dispose de cuv\u00e9es parcellaires depuis vingt ans, est donc compl\u00e9t\u00e9 par un autre vin de terroir.<\/p>\n<p>Au nord de l\u2019appellation, les terres sablonneuses et de galets roul\u00e9s sont les plus r\u00e9sistantes \u00e0 la s\u00e8cheresse, avec un rendement naturellement bas de 25 hectolitres par hectare. A Panisse, comme au Caillou, les vignes sont entour\u00e9es de for\u00eat ou de lavande, avec une forme pr\u00e9serv\u00e9e de biodiversit\u00e9. Et si le domaine principal est en bio, m\u00e2tin\u00e9e de biodynamie, depuis le mill\u00e9sime 2010, Panisse ach\u00e8ve sa reconversion. D\u00e8s 2003, on a \u00abgagn\u00e9\u00bb 1 \u00e0 1,5% d\u2019alcool&#8230; Pour corriger cette tendance, on doit agir dans les vignes\u00bb<\/em>. Pas question de modifier l\u2019enc\u00e9pagement de base\u00a0: le GSM (comme disent les Australiens), soit le trio grenache-syrah-mourv\u00e8dre, <em>\u00abne devrait pas changer radicalement ces prochaines ann\u00e9es\u00bb<\/em>, pronostique <strong>Axel Vacheron<\/strong>. <em>\u00abOn doit aider le v\u00e9g\u00e9tal \u00e0 r\u00e9sister, par exemple par des semis et un couvert de paillage. Il faut \u00e9tudier des porte-greffes plus vigoureux, plus tardifs et plus r\u00e9sistants. On va replanter du carignan et complanter p\u00eale-m\u00eale du mourv\u00e8dre avec du grenache. En vinification, on va aller vers de la vendange enti\u00e8re et de la mac\u00e9ration carbonique, qu\u2019on pratique d\u00e9j\u00e0 sur le cinsault. Un sol m\u00eal\u00e9 de sable et d\u2019argile, les safres, permet de retarder les vendanges, parfois : <em>\u00abChez nous, le 2004 est meilleur que le 2003\u00bb<\/em>. Pour <em>\u00abagir sur les m\u00e9thodes de culture\u00bb<\/em>, le titulaire du bachelor de Changins, qui a fait des stages chez <strong>Louis-Philippe Bovard<\/strong>, \u00e0 Lavaux, et <strong>Mathilde Roux<\/strong>, \u00e0 Fully (VS), est admiratif du savoir-faire suisse. <em>\u00abLa ma\u00eetrise du flux de s\u00e8ve est int\u00e9ressante, de la taille \u00e0 l\u2019\u00e9bourgeonnage. Et quand la <strong>famille Vacheron<\/strong> l\u2019a rachet\u00e9, en 2020, elle cherchait \u00e0 compl\u00e9ter son <em><strong>Clos du Caillou<\/strong><\/em>, un domaine acquis en 1956 et dont la r\u00e9putation ne cesse de cro\u00eetre. <em>\u00abD\u00e8s la premi\u00e8re r\u00e9colte, on s\u2019est rendu compte que ces 6,5 hectares d\u2019un seul tenant ont leur propre identit\u00e9\u00bb<\/em>, raconte <strong>Axel Vacheron<\/strong> qui, avec sa s\u0153ur et son beau-fr\u00e8re, s\u2019appr\u00eatent \u00e0 reprendre l\u2019ensemble des deux domaines. Le jeune trentenaire, apr\u00e8s un apprentissage de vigneron en France, a obtenu son bachelor en Suisse, \u00e0 la haute \u00e9cole de Changins, qui forme chaque ann\u00e9e quelques non-Suisses.<\/p>\n<p style=\"font-weight: 400;\">Sur ce 2021, on pourrait (presque) percevoir un doigt\u00e9 helv\u00e9tique&#8230; Le mill\u00e9sime, froid et venteux, fut compliqu\u00e9, entre un gel de printemps <em>\u00abhistorique\u00bb<\/em> et des pluies intenses juste au (pire) moment des vendanges. Mais, comme l\u2019explique <strong>Bruno Gaspard<\/strong>, le ma\u00eetre de chai exp\u00e9riment\u00e9 du Clos du Caillou, o\u00f9 les vins de Panisse sont \u00e9labor\u00e9s et \u00e9lev\u00e9s, <em>\u00abdans les mill\u00e9simes frais, le grenache tire sur le pinot noir\u00bb<\/em>. Avec son l\u00e9ger c\u00f4t\u00e9 fum\u00e9 au nez, ce beau rouge est d\u00e9j\u00e0 ouvert, frais et juteux, avec des notes \u00e9pic\u00e9es de poivre noir et de coriandre. Les quatre c\u00e9pages du domaine concourent \u00e0 cette aromatique, avec 50% de grenache, 20% de syrah et autant de mourv\u00e8dre et 10% de cinsault. Comme le <em><strong>Clos du Caillou<\/strong><\/em>, certifi\u00e9 depuis plus de dix ans, qui applique des pr\u00e9parations de biodynamie, le <em><strong>Domaine de Panisse<\/strong><\/em> a \u00e9t\u00e9 converti en bio.<\/p>\n<p style=\"font-weight: 400;\">Cette inesp\u00e9r\u00e9e renaissance, la nouvelle g\u00e9n\u00e9ration l\u2019assume\u00a0: <em>\u00abCela nous g\u00eanait de m\u00e9langer deux histoires.
