Il a fait venir, il y a deux ans, deux <em>\u00abkvevri\u00bb<\/em>. Ces jarres en terre cuite d\u2019une contenance de quelque 900 litres ont \u00e9t\u00e9 enterr\u00e9es dans le jardin du ch\u00e2teau. On y a log\u00e9 en 2022 du freiburger et en 2023, du traminer, les deux c\u00e9pages blancs embl\u00e9matiques du Vully, qui font l\u2019objet d\u2019une charte de qualit\u00e9 depuis dix ans.<\/p>\n<p style=\"font-weight: 400;\">Alors que l\u2019Organisation internationale de la vigne et du vin (OIV), install\u00e9e depuis peu \u00e0 Dijon, reconna\u00eet le <em>\u00abvin blanc avec mac\u00e9ration\u00bb<\/em> durant un mois minimum, au <strong>Ch\u00e2teau de Praz<\/strong>, on a choisi la m\u00e9thode g\u00e9orgienne longue de plus de six mois. Seule entorse : on a privil\u00e9gi\u00e9 les baies enti\u00e8res, mais sans la partie v\u00e9g\u00e9tale, la rafle. Puis le contenu a \u00e9t\u00e9 press\u00e9 et mis en bouteille cet \u00e9t\u00e9. R\u00e9sultat, le gewurztraminer a perdu son c\u00f4t\u00e9 floral et muscat\u00e9, au profit d\u2019ar\u00f4mes complexes de cire d\u2019abeille, de zestes d\u2019agrumes, de gingembre confit et de poire \u00e0 botzi, digne de la B\u00e9nichon fribourgeoise.
