La majorit\u00e9 des chasselas paraissent trop souvent neutres, par manque d\u2019acidit\u00e9, et\/ou un peu mous, pour cause de maturit\u00e9 de la vendange ou de chaptalisation, et parce qu&rsquo;ils font leur deuxi\u00e8me fermentation, la malo(lactique). Ils sont parfois corset\u00e9s par l\u2019\u00e9levage en cuve inox et la mise en bouteille pr\u00e9coce au printemps suivant la vendange, et donc sans oxyg\u00e9nation naturelle dans un f\u00fbt. Voil\u00e0 pour la g\u00e9n\u00e9ralit\u00e9 ! Un groupe de jeunes passionn\u00e9s du vin de la r\u00e9gion a d\u00e9cid\u00e9 d\u2019inverser la tendance, en ajoutant un <em>\u00absuppl\u00e9ment d\u2019\u00e2me\u00bb<\/em> \u00e0 ce projet, justement baptis\u00e9 <em>\u00abAnima\u00bb<\/em>.<\/p>\n<h3 style=\"font-weight: 400\"><strong>Trois cuv\u00e9es, mais cinq vendanges<\/strong><\/h3>\n<p style=\"font-weight: 400\">Le projet en est \u00e0 sa cinqui\u00e8me vendange. Mais \u00e0 son troisi\u00e8me mill\u00e9sime, seulement. On l\u2019a go\u00fbt\u00e9&nbsp;: les param\u00e8tres exactement invers\u00e9s du premier paragraphe se retrouvent pleinement dans le verre&nbsp;! Le vin se r\u00e9v\u00e8le <em>\u00abpointu\u00bb<\/em>, dans ses ar\u00f4mes comme dans sa d\u00e9marche. Dans une vigne \u00e0 460 m. d\u2019altitude, de Villette, appartenant \u00e0 <strong>Blaise Duboux<\/strong>, un des <em>\u00abtout bons\u00bb<\/em> vignerons de Lavaux, les raisins n\u2019ont pas surm\u00fbris ; ils ont \u00e9t\u00e9 cueillis et tri\u00e9s quasi grains \u00e0 grains. Et \u00e0 maturit\u00e9 optimale : 85 degr\u00e9s Oechsl\u00e9. Soit 12,4% d\u2019alcool, non corrig\u00e9. <em>\u00abL\u2019alcool, pourvu qu\u2019il y en ait peu et qu\u2019il soit naturel, suffit\u00bb<\/em>, commente sobrement l&rsquo;\u0153nologue <strong>Richard Pfister<\/strong>. En cave, deux lots de mo\u00fbts, l\u2019un d\u2019\u00e9coulure, l\u2019autre press\u00e9, sont trait\u00e9s s\u00e9par\u00e9ment, en lots distincts y compris durant l\u2019\u00e9levage. On reste Vaudois et donc champion du juste milieu : <em>\u00abEn fait, \u00e0 raison de 50% de l\u2019un et de l\u2019autre, on a l\u2019assemblage final\u00bb<\/em>, sourit l\u2019\u0153nologue. Les mille bouteilles (\u00e0 51 francs pi\u00e8ce) et cent magnums sont mis en vente deux ans apr\u00e8s. Un nez un peu menthol\u00e9, avec une note de limette, voire de bergamote&nbsp;; acidit\u00e9 vive \u00e0 l\u2019attaque (pas de malolactique&nbsp;!), structure moyenne, bien envelopp\u00e9e&nbsp;; finale fra\u00eeche, avec une pointe de noisette et d\u2019amande. Un vin vif et plein de personnalit\u00e9, \u00e0 revoir apr\u00e8s quelques ann\u00e9es de bouteille.<\/p>\n<h3 style=\"font-weight: 400\"><strong>Une aventure en D\u00e9zaley<\/strong><\/h3>\n<p style=\"font-weight: 400\">Ce vin a \u00e9t\u00e9 vinifi\u00e9 dans les caves du <strong>Clos des Abbaye<\/strong>s, appartenant \u00e0 la Ville de Lausanne depuis 1536. Le fait nouveau d\u2019Anima, c\u2019est qu\u2019un partenariat de longue dur\u00e9e devrait s\u2019installer avec ce magnifique domaine au c\u0153ur du D\u00e9zaley, le terroir le plus prestigieux de Lavaux. En 2024 et 2025, les joyeux lurons du projet ont vendang\u00e9 une parcelle, Le Triangle, juste sous la route panoramique de la Corniche, \u00e0 430 m. d\u2019altitude, cultiv\u00e9e en bio depuis 2025, d\u00e9pendant de l\u2019autre clos lausannois, celui des Moines. L\u2019\u00e9tiquette, d\u2019abord, un prisme jaune-vert, con\u00e7u d\u2019apr\u00e8s les diagrammes m\u00e9t\u00e9o d\u2019une ann\u00e9e contrast\u00e9e, m\u00eame si elle restera dans les annales comme la deuxi\u00e8me plus chaude apr\u00e8s 2022. Et la musique, en \u00abdolby atmos\u00bb, qui doit s\u2019\u00e9couter \u00e0 360 degr\u00e9s en immersion&nbsp;: les sons sont ceux tir\u00e9s de la vigne et mix\u00e9s.
