Le sommelier, J\u00e9r\u00f4me Ak\u00e9 B\u00e9da, convie chaque mois un vigneron, qui propose une recette de son cru au chef G\u00e9rard Cavuscens. Jeudi 6 d\u00e9cembre 2007, ils seront deux Valaisans, le Sierrois <span style=\"font-weight: bold;\">Denis Mercier<\/span>, dont le cornalin est aussi fameux que sa syrah, et le S\u00e9dunois (de Pont-de-la-Morge) <span style=\"font-weight: bold;\">Thierry Constantin<\/span>. Six plats, sept vins, pour 170 francs par personne, tout compris. Pour 2008, les dates et les invit\u00e9s sont d\u00e9j\u00e0 connus: c&#39;est simple, toujours le premier jeudi du mois, et des vignerons bien connus. Le 7 f\u00e9vrier, <span style=\"font-weight: bold;\">Raymond Paccot<\/span>, de F\u00e9chy, ouvre les feux, avant, le 6 mars, un vigneron du Sud de la France, <span style=\"font-weight: bold;\">Patrick Chabrier<\/span>, qui a redor\u00e9 le blason du Duch\u00e9 d&#39;Uz\u00e8s (et cultive aussi des vignes du c\u00f4t\u00e9 de Sierre!), le 3 avril, <span style=\"font-weight: bold;\">Gilles Besse<\/span>, de Bon P\u00e8re Germanier, \u00e0 V\u00e9troz, le 1er mai, les r\u00e9gionaux de cette saison, <span style=\"font-weight: bold;\">Jean-Fran\u00e7ois Cossy et Olivier Ducret<\/span>, de Chardonne, et le 5 juin un des Tessinois du cru qui a su prendre le bon virage du merlot, il y a une vingatine d&#39;ann\u00e9es, <span style=\"font-weight: bold;\">Claudio Tamborini<\/span>, de Lamone (Comano, San Zeno,&#8230;). <br \/>Cet automne, reprise des soir\u00e9es avec les <span style=\"font-weight: bold;\">Grognuz p\u00e8re et fils, Marco et Fran\u00e7ois<\/span>, le jeudi 6 novembre. Ces vignerons de La Tour-de-Peilz sont les plus Vaudois des Valaisans: leur cave est \u00e0 Villeneuve, mais leurs vignes principales aux Evouettes. Et ils sont connus pour leur rare Syrah de Saint-Saphorin. Ils seront \u00e0 l&#39;Onde le jeudi 6 novembre. Un mois plus tard, le jeudi 4 d\u00e9cembre, cuisine non pas \u00e0 quatre, mais \u00e0 six mains et vingt doigts de f\u00e9es&#8230; Trois champions suisses du pinot noir feront le d\u00e9placement: les <span style=\"font-weight: bold;\">Grisonnes Annatina Pelizatti et Ir\u00e8ne Gr\u00fcnenfelder<\/span>, dont les vins sont remarquables, en version fruit ou bois\u00e9e.
