Pas d\u2019\u00e9toiles jet\u00e9es \u00e0 la t\u00eate des chefs, cette ann\u00e9e.<\/span><br \/>La gu\u00e9guerre qui oppose les guides gastronomiques met dans le camp des audacieux le <span style=\"font-style: italic;\">GaultMillau<\/span> (\u00e9dit\u00e9 par Ringier) et dans les prudents, le Michelin. En donnant deux \u00e9toiles d\u2019un coup \u00e0 Andreas Caminada, le chef du ch\u00e2teau Schauenstein, \u00e0 F\u00fcrstenau, pr\u00e8s de Coire (GR), GM (<span style=\"font-style: italic;\">Guide Michelin<\/span>) r\u00e9alise la symbiose avec GM (<span style=\"font-style: italic;\">GaultMillau<\/span>), puisque le jeune Grison est le \u00abchef de l\u2019ann\u00e9e\u00bb de l\u2019\u00e9dition 2008 du second opuscule.<br \/>Dans les nouveaut\u00e9s, on notera que les \u00abinspecteurs\u00bb, qui ne sonnent pas deux fois, mais passent tous les deux ou trois ans par secteur, ont fait le m\u00e9nage du c\u00f4t\u00e9 des Grisons, o\u00f9 quelques \u00e9toiles vacillent et d\u2019autres apparaissent. Pour le reste, l\u2019ex-chef du Mirador au Mont-P\u00e8lerin (VD), l\u2019Allemand Peter Knogl, obtient \u00abson\u00bb \u00e9toile au Cheval-Blanc, le gastro de l\u2019H\u00f4tel des Trois-Rois, \u00e0 B\u00e2le, tandis que le palace vaudois sauve la sienne, avec son nouveau chef Willy Rossignol. Toujours tr\u00e8s francophile, le Michelin d\u00e9cerne une \u00e9toile \u00e0 l\u2019ex-Parisien Richard Mebkhout, au Prado, \u00e0 Gstaad. Au Tessin, le Conca Bella, h\u00f4tel \u00e0 la cave somptueuse, d\u00e9croche une \u00e9toile avec son nouveau chef, Gian Luca Bos. <br \/><font size=\"2\"><span style=\"font-weight: bold;\">La Suisse romande d\u00e9laiss\u00e9e<\/span><\/font><br \/>Et en Suisse romande? Elle n\u2019a manifestement pas fait l\u2019objet d\u2019une op\u00e9ration coup de balai des inspecteurs\u2026 Ils se sont born\u00e9s \u00e0 enlever quelques \u00e9toiles tomb\u00e9es en d\u00e9su\u00e9tude, comme au Neptune et \u00e0 La Colombi\u00e8re, tous deux ferm\u00e9s du c\u00f4t\u00e9 de Gen\u00e8ve, et Roland Pierroz \u00e0 Verbier. Deux restos qui ont renonc\u00e9 au gastro haut de gamme pour la brasserie soign\u00e9e, La Tour, \u00e0 Bulle-La Tour-de-Tr\u00eame, et Le Gourmet, \u00e0 Martigny, perdent leur \u00e9toile, comme Le Raisin, \u00e0 Cully, apr\u00e8s le d\u00e9c\u00e8s d\u2019Adolfo Blockbergen. <br \/>Reste, pour aucune promotion, une perte s\u00e8che d\u2019\u00e9toile pour le Guillaume Tell, \u00e0 Aran-Villette, o\u00f9 le \u00abone-man-show\u00bb du chef a d\u00e9plu&#8230; Dans les promesses, puisque le guide rouge a introduit une cat\u00e9gorie \u00abespoirs\u00bb, quatre promesses seulement, dont une pour J\u00e9r\u00f4me Manifacier, le jeune chef talentueux du Vertig\u2019o, de l\u2019H\u00f4tel de la Paix, \u00e0 Gen\u00e8ve, et pour les Luganais, dont on dit grand bien, Roberto et Silvio Galizzi, Al Portone.
