D\u00e9j\u00e0 chef de l\u2019ann\u00e9e 2008 pour GaultMillau Suisse, Andreas Caminada, du Schauenstein \u00e0 F\u00fcrstenau (GR) peut nourrir quelque espoir de rejoindre Philippe Rochat et G\u00e9rard Rabaey au sommet de la gastronomie suisse, format Bibendum. Alors qu\u2019on pouvait imaginer qu\u2019un Didier de Courten, \u00e0 Sierre, tenait la corde\u2026<\/span><br \/>Pour le reste, l\u2019\u00e9dition qui recense 1623 adresses en Suisse, et donne, comme toujours, un r\u00e9pertoire tr\u00e8s complet d\u2019h\u00f4tels de toutes les cat\u00e9gories, a fait un peu le m\u00e9nage du c\u00f4t\u00e9 de B\u00e2le, en Suisse centrale et dans les cantons de Vaud et du Valais. <br \/>Deux chefs connus, Peter Knogl (Allemand, exil\u00e9 au Espagne d\u2019abord, puis qui passa nagu\u00e8re par le Trianon du Mirador au Mont-P\u00e8lerin, aujourd\u2019hui en r\u00e9novation), obtient une deuxi\u00e8me \u00e9toile au Cheval Blanc, \u00e0 B\u00e2le, comme Franz Wiget \u00e0 l\u2019Adelboden, pr\u00e8s de Schwyz (Steinen). Seule promotion en Suisse romande, Marco Bassi, le chef de la Table d\u2019Adrien, dans le chalet homonyme, \u00e0 Verbier, station o\u00f9 Roland Pierroz ne parvint jamais \u00e0 d\u00e9passer ce niveau macaronesque. <br \/><span style=\"font-weight: bold;\">Une \u00e9toile tombe \u00e0 Lausanne et Saint-Saph\u2019<\/span><br \/>Hormis le Trianon du Mont-P\u00e8lerin, la Pomme de Pin, \u00e0 Lausanne, perd son macaron, comme l\u2019Auberge de l\u2019Onde, \u00e0 Saint-Saphorin, dont on sait le chef G\u00e9rald Cavuscens sur le d\u00e9part\u2026 A Orsi\u00e8res, aux Alpes, c\u2019est Jean-Maurice Joris qui renonce \u00e0 son \u00e9toile, pour se consacrer \u00e0 son bistrot, d\u00e9j\u00e0 r\u00e9pertori\u00e9 \u00abbib gourmand\u00bb, c\u2019est-\u00e0-dire une adresse d\u2019un bon rapport qualit\u00e9-prix. <br \/>Deux adresses vaudoises font leur apparition dans cette cat\u00e9gorie, l\u2019Auberge Communale d\u2019Aclens, de Luc Parmentier et Nathalie Borne, et leurs amis du caf\u00e9 du Lion-d\u2019Or, \u00e0 Tannay. Trois adresses disparaissent, La Pomme de Pin, l\u2019Auberge de la Couronne \u00e0 Apples et l\u2019auberge communale de Sullens, temple de la cochonnaille hivernale\u2026 <br \/>Ailleurs en Suisse romande, le Schild, \u00e0 Fribourg, subit le m\u00eame sort, dans les Bibs gourmands.
