Une d\u00e9marche originale, par l\u2019exemple.<\/b><br \/>\n<i>Pierre Thomas<\/i><br \/>\nSecr\u00e9taire g\u00e9n\u00e9ral de l\u2019Office des vins vaudois (OVV), <b>Nicolas Schorderet<\/b> est un ancien de l\u2019Ecole h\u00f4teli\u00e8re de Lausanne (EHL), qui a tenu plusieurs \u00e9tablissements publics. Dans le droit fil de sa formation, <i><b>il se propose d\u2019aller \u00e0 la rencontre des h\u00f4teliers et restaurateurs vaudois. Les \u00e9tablissements vis\u00e9s ne sont pas ceux de haut de gamme, qui disposent d\u2019un sommelier professionnel, mais plut\u00f4t ceux qui n\u2019ont pas la possibilit\u00e9 de dynamiser leur offre en vins<\/b><\/i>. <\/p>\n<p><img loading=\"lazy\" width=\"600\" height=\"398\" src=\"img\/sit_ovv_schordkel.jpg\" alt=\"sit_ovv_schordkel.jpg\" title=\"sit_ovv_schordkel.jpg\" \/><\/p>\n<p>La bonne parole leur parviendra \u00ab\u00e0 la carte\u00bb, sous la responsabilit\u00e9 de <b>Laurence Keller<\/b>, (<i>ci-dessus, en plein exercice, avec Nicolas Schorderet<\/i>) une \u0153nologue ind\u00e9pendante mandat\u00e9e par l\u2019OVV. Les cours seront donn\u00e9s sur place, durant la pause de l\u2019apr\u00e8s-midi, avec les vins de l\u2019\u00e9tablissement, les verres \u00e0 disposition. <i><b>\u00abNous voulons favoriser une nouvelle ouverture\u00bb<\/b><\/i>, explique Nicolas Schorderet. L\u2019offre, gratuite, sera adress\u00e9e dans un premier temps \u00e0 600 \u00e9tablissements cibl\u00e9s, parmi les quelque 2300 adresses r\u00e9parties entre caf\u00e9s, restaurants et h\u00f4tels vaudois. Chaque \u00e9tablissement sera contact\u00e9 et pri\u00e9 de s\u2019inscrire. L\u2019OVV assumera seul le co\u00fbt de l\u2019op\u00e9ration, devis\u00e9e \u00e0 50&rsquo;000 francs pour 2011.<\/div>\n<h4>\u00abJamais le temps pour la formation permanente\u00bb<\/h4>\n<div style=\"text-align: justify;\">Le Morgien <b>Philippe Th\u00fcner<\/b>, pr\u00e9sident de l\u2019Association des h\u00f4teliers romands, juge l\u2019initiative \u00abtr\u00e8s positive. Les petites structures n\u2019ont jamais le temps pour la formation permanente. Que l\u2019OVV vienne sur place est une excellente chose. <i><b>Il faut que les restaurateurs et les h\u00f4teliers en profitent&#160;: \u00e7a ne leur co\u00fbte rien&#160;!\u00bb<\/b><\/i> Mais de tels cours de sensibilisation ne devraient-ils pas passer par la formation de base des restaurateurs&#160;? \u00abComme l\u2019a voulu le conseiller f\u00e9d\u00e9ral <b>Joseph Deiss<\/b> \u00e0 l\u2019\u00e9poque, avec sa loi f\u00e9d\u00e9rale sur le march\u00e9 int\u00e9rieur, l\u2019obligation de suivre des cours de base se limite \u00e0 deux modules, l\u2019un sur les lois en vigueur, l\u2019autre sur l\u2019hygi\u00e8ne. Le reste est facultatif. Ce que nous d\u00e9plorons\u00bb, regrette Philippe Th\u00fcner. Par lettre, il encouragera vivement les 170 h\u00f4tels vaudois, membres de l\u2019association et repr\u00e9sentant 90% des lits, \u00e0 faire appel aux formateurs de l\u2019OVV.<\/div>\n<h4>Un \u00e9ventail large de vins vaudois<\/h4>\n<div style=\"text-align: justify;\">Pour Laurence Keller, il y a encore un gros potentiel de connaissance des vins vaudois. Si 68% de la production vaudoise reste du chasselas, une soixantaine de c\u00e9pages sont recens\u00e9s dans le vignoble vaudois. <i><b>\u00abDes vins moins courants, qu\u2019il faut d\u00e9couvrir, peuvent accompagner des mets\u00bb<\/b><\/i>, explique l\u2019\u0153nologue, qui s\u2019est sp\u00e9cialis\u00e9e dans les accords mets et vins. Lors de la conf\u00e9rence de presse pr\u00e9sentant l\u2019initiative de l\u2019OVV, elle en a fait la d\u00e9monstration, avec la complicit\u00e9 du chef <b>Etienne Krebs<\/b>, \u00e0 L\u2019Ermitage, \u00e0 Clarens. Une palette de vins parmi les mieux not\u00e9s de la S\u00e9lection des vins vaudois (une brochure \u00e0 destination des restaurateurs les recense) a \u00e9t\u00e9 confront\u00e9e \u00e0 des mets aux saveurs subtiles. <br \/>\nAvec une \u00e9vidence&#160;: <b>plus la cuisine multiplie les go\u00fbts dans l\u2019assiette, plus l\u2019\u00e9ventail des vins s\u2019ouvre<\/b>.
