A Lausanne para\u00eet la 17\u00e8me \u00e9dition du <i>vademecum<\/i> rouge et blanc, <i>corporate<\/i> avec son titre de tutelle et \u00e0 Gen\u00e8ve, la 6\u00e8me \u00e9dition en bleu et blanc. On regrette, d\u2019embl\u00e9e, que dans ces guides au format de poche, les nouvelles adresses retenues ne soient pas clairement signal\u00e9es. Car d\u00e8s le d\u00e9but, \u00e0 Bex, on tombe sur deux tables nouvelles et all\u00e9chantes, le Caf\u00e9 Suisse et la Palette des Sens. Et pourtant, les deux r\u00e9dacteurs-pr\u00e9faciers mettent l\u2019accent sur ces \u00abnouvelles adresses\u00bb. Leur arriv\u00e9e, explique <b>David Moginier<\/b>, a pu s\u2019accompagner du sacrifice \u00abde quelques anciennes adresses dont la notori\u00e9t\u00e9 n\u2019\u00e9tait plus \u00e0 faire\u00bb. <b>Alain Giroud<\/b>, lui, salue le retour de quelques tables qui avaient disparu de l\u2019\u00e9dition 2009, faute de qualit\u00e9 suffisante. Les deux chroniqueurs soulignent que la crise a oblig\u00e9 les patrons des \u00e9tablissements publics \u00e0 am\u00e9liorer la qualit\u00e9 et \u00e0 dynamiser l\u2019offre.<br \/>\n<b>Deux guides compl\u00e9mentaires<\/b><br \/>\nPh\u00e9nom\u00e8ne urbain autant \u00e0 Gen\u00e8ve qu\u2019\u00e0 Lausanne, les adresses exotiques \u2014 \u00e0 commencer par l\u2019Italie \u00e0 Gen\u00e8ve\u2026 \u2014 se multiplient. Les deux petits guides (192 pages pour le vaudois, 212 pour le genevois, avec des tableaux) ne se recoupent pas enti\u00e8rement. Le vaudois (177 adresses vaudoises) s\u2019\u00e9largit \u00e0 la Suisse romande (135, dont 50 genevoises). Le genevois (158 adresses locales) a limit\u00e9 les tables vaudoises (46), mais regarde du c\u00f4t\u00e9 de la France que les Genevois appellent \u00abvoisine\u00bb et le Valais (26 adresses) \u00abo\u00f9 la progression qualitative de la cuisine est notable\u00bb, note l&rsquo;auteur, Valaisan de Gen\u00e8ve. On se consolera avec les 24 adresses fribourgeoises du guide vaudois (r\u00e9duites \u00e0 13 dans le genevois).<br \/>\nA noter aussi, au chapitre des diff\u00e9rences, dans l\u2019\u00e9dition du \u00abCoup de Fourchette\u00bb, des symboles qualifiant sur un maximum de 5, la table, l\u2019addition et la cave (nouveaut\u00e9 de la 12\u00e8me \u00e9dition 1998-1999, celle que j\u2019avais conduite, en d\u00e9poussi\u00e9rant la formule et en revenant au petit format initial).&#160; \u00abA table !\u00bb ne livre pas de cotation, sinon par le ton du texte, am\u00e8ne et positif. Et les deux opuscules, finalement compl\u00e9mentaires, rangent leurs tables en cat\u00e9gorie (tables cr\u00e9atives, modernes, traditionnelles, bistrot, d\u2019ailleurs).
