Mais, depuis quinze ans, les viticulteurs suisses se sont rendu \u00e0 l\u2019\u00e9vidence qu\u2019il est possible d\u2019am\u00e9liorer la qualit\u00e9 finale du raisin \u00e0 condition de couper des grappes. Une op\u00e9ration qui a lieu entre la mi-juillet et le d\u00e9but ao\u00fbt, appel\u00e9e \u00abvendanges vertes\u00bb ou \u00aben vert\u00bb. Les grappes coup\u00e9es jonchent le sol et se transforment en compost \u00absui generis\u00bb. Le chef de cuisine Heinz Rufibach de l\u2019H\u00f4tel Alpenhof \u00e0 Zermatt s\u2019est \u00e9tonn\u00e9 de ce \u00abgaspillage\u00bb, aupr\u00e8s de Diego Mathier, de la quatri\u00e8me g\u00e9n\u00e9ration des encaveurs salquenards : \u00abPourquoi ne pas faire du verjus?\u00bb <br \/> Le jus non ferment\u00e9 des raisins verts revient \u00e0 la mode.
