Parce que la bonne cuisine est toujours une f\u00eate\u2026<\/span><br \/> Tout para\u00eet r\u00e9ussir \u00e0 ce \u00abself made man\u00bb de 42 ans. Ce printemps, il a r\u00e9ouvert, avec l\u2019appui du patron de la manufacture Audemars-Piguet, l\u2019H\u00f4tel des Horlogers, au Brassus. R\u00e9cemment, il recevait le \u00abPrix du bon pain\u00bb, sacrant le meilleur boulanger vaudois. Et, apr\u00e8s Girardet, Pierroz, Rochat, Rabaey et Judith Baumann, il sort \u00abson\u00bb livre de recettes, illustr\u00e9 par le photographe Pierre-Michel Delessert. Il est tir\u00e9 d\u2019embl\u00e9e \u00e0 12&#39;000 exemplaires, pour anticiper le passage du confiseur aux multiples talents, du 24 d\u00e9cembre au 28 janvier, tous les samedis, chez le duo Lapp-Simon, \u00e0 la TV romande, \u00e0 \u00abL\u2019\u00e9cole des chefs\u00bb.<br \/> <span style=\"font-weight: bold;\">Musique d\u2019avenir au Brassus<\/span><br \/> Au Brassus, le restaurant de l\u2019H\u00f4tel des Horlogers vient d\u2019entrer dans le guide GaultMillau Suisse, \u00e0 14 points sur 20. \u00abC\u2019est trop, surtout par rapport \u00e0 La Br\u00e9guette et \u00e0 Orbe\u00bb, confie le (trop) modeste Guignard. Il vient d\u2019ouvrir \u00e0 Montcherand, au pied du Jura vaudois, une \u00abcuisine de production\u00bb qui emploie deux personnes \u00e0 plein temps pour ravitailler les autres adresses en plats pr\u00e9par\u00e9s. Il va y ajouter un service traiteur, qui proposera les \u00abplats du terroir\u00bb de La Br\u00e9guette dans toute la Suisse romande. <br \/> Et l\u2019h\u00f4tel, class\u00e9 quatre \u00e9toiles, de 19 chambres et 8 suites? \u00abGr\u00e2ce au tourisme d\u2019affaires li\u00e9 \u00e0 l\u2019horlogerie, il a affich\u00e9 complet de juillet \u00e0 septembre. Mais, il n\u2019y a pas de tourisme de passage \u00e0 La Vall\u00e9e de Joux\u00bb, d\u00e9plore Philippe Guignard. \u00abLes gens ne viennent de la plaine que pour un jour. Jusqu\u2019ici, il n\u2019y avait rien.
