Mais il ne m\u00e2che pas ses mots. \u00abSur nos 600 hectares, on devrait se consacrer \u00e0 faire bon, c\u2019est tout. En 15 ans, le pinot noir est pass\u00e9 de 120 \u00e0 260 hectares. Il est donc urgent d\u2019attendre avant de proc\u00e9der \u00e0 une classification. Quand je dis que je plante de l\u2019\u0153il-de-perdrix derri\u00e8re le Ch\u00e2teau, mes coll\u00e8gues rigolent. Mais je sais tr\u00e8s bien qu\u2019ici, je ferai du ros\u00e9 et jamais un grand pinot noir. On manque de recul et de modestie\u2026 Il y a deux ans que la discussion sur un grand cru fait rage et si on avait consid\u00e9r\u00e9 les 2003, 80% des pinots noirs de Neuch\u00e2tel eussent m\u00e9rit\u00e9 d\u2019\u00eatre grands crus! Pour l\u2019instant, c\u2019est le nom du producteur qui fait foi. Il faudra une demi-g\u00e9n\u00e9ration, 15 ans au bas mot, pour \u00e9tablir une hi\u00e9rarchie.\u00bb<br \/> <span style=\"font-weight: bold;\">Cent hectares sur le calcaire jaune<\/span><br \/> Voil\u00e0 qui relativise l\u2019impact de la cartographie du sol neuch\u00e2telois, \u00e0 raison d\u2019un \u00abprofil\u00bb de sol \u00e0 2 m\u00e8tres de profondeur tous les 10 hectares. A l\u2019instar des vignobles vaudois et valaisan, le neuch\u00e2telois s\u2019est form\u00e9 sous une langue de glace, il y a 12&#39;000 ans. Le sous-sol ressemble \u00e0 une mosa\u00efque, o\u00f9 l\u2019on retrouve du calcaire du Jura, de la mollasse, de la moraine et des \u00e9boulis. Parmi une cinquantaine de types de sols, une vingtaine recoupent 72% du vignoble. Seuls une centaine d\u2019hectares sont \u00e9tablis sur le calcaire de Neuch\u00e2tel, tandis qu\u2019entre Bevaix et Auvernier, il s\u2019agit plut\u00f4t d\u2019un sol sableux. <br \/> Pour le chef de la viticulture neuch\u00e2teloise, Eric Beuret, l\u2019\u00e9tude, command\u00e9e au bureau fran\u00e7ais qui a d\u00e9j\u00e0 \u0153uvr\u00e9 dans le Pays de Vaud et, actuellement, en Valais, est avant tout un \u00aboutil de travail et pas de d\u00e9cision\u00bb. Le conseiller d\u2019Etat Bernard Soguel observe, quant \u00e0 lui, qu\u2019existe \u00abune crainte de classifier les viticulteurs et leurs vins\u00bb, mais \u00abqu\u2019on sera oblig\u00e9 d\u2019augmenter la qualit\u00e9.
