Ce confiseur de Fleurier a cr\u00e9\u00e9 des truffes \u00e0 l\u2019absinthe il y a une dizaine d\u2019ann\u00e9es. Aujourd\u2019hui, il donne des id\u00e9es. D\u2019autres confiseurs neuch\u00e2telois ont concoct\u00e9 des chocolats, genre b\u00e2tons \u00e0 la liqueur, que l\u2019on croque. Mais Jacques Perrenoud, ancien apprenti chez Schneider, \u00e0 Bienne, a mis \u00e0 profit son tour de main pour un produit sophistiqu\u00e9&nbsp;: \u00abMes truffes sont r\u00e9alis\u00e9es une \u00e0 une, \u00e0 la main, \u00e0 l\u2019ancienne. On retrouve une consistance \u00e0 la fois ferme et moelleuse. Pour la couverture, j\u2019avais essay\u00e9 le chocolat noir, mais j\u2019ai opt\u00e9 pour le blanc afin d\u2019\u00e9viter que les amertumes se combattent.\u00bb Et c\u2019est bien l\u2019\u00e9quilibre dans la finesse qui caract\u00e9rise ces truffes. <br \/> Seul (encore) \u00e0 en vendre hors du Vallon, Christophe Bachmann. Avec son stand labellis\u00e9 produits du terroir neuch\u00e2telois, le Chaux-de-Fonnier \u00e9cume les foires romandes.
