C\u2019est la feuille phare de la cueillette sauvage, qui s\u2019est popularis\u00e9e jusque chez les plus c\u00e9l\u00e8bres toqu\u00e9s des Pr\u00e9alpes et des Alpes.<br \/> Depuis qu\u2019un chasseur a tu\u00e9 le dernier plantigrade sur sol helv\u00e9tique, le 1er septembre 1904 au fond des Grisons, on ne voit plus d\u2019ours dans nos for\u00eats, m\u00eame si un rapport du WWF concluait, il y a douze ans, que l\u2019animal pourrait fort bien vivre en paix en Suisse. <br \/> Qui redoute l\u2019arriv\u00e9e de l\u2019ours dans nos for\u00eats ne devrait pas craindre d\u2019aller au bois cueillir cet ail sauvage, \u00aballium ursinum\u00bb en latin de jardin ou \u00abherba alii ursini\u00bb en latin de pharmacien. Et en latin de cuisine&nbsp;? Faites un tour sur le site internet de l\u2019Institut agronomique de Grangeneuve, pr\u00e8s de Fribourg, <a href=\"http:\/\/www.fr.ch\/grangeneuve\/formation\/cefa\/recettes\/default.htm\">www.fr.ch\/grangeneuve<\/a>. Quelques plats fleurant bons le terroir vous mettront l\u2019eau \u00e0 la bouche&nbsp;: un gratin \u00e0 l\u2019ail des ours (il en faut un bon kilo&nbsp;!) et jambon, des sp\u00e4tzlis \u00abverts\u00bb et un app\u00e9tissant risotto o\u00f9 les feuilles, coup\u00e9es en lani\u00e8res, sont ajout\u00e9es cinq minutes avant la fin de la cuisson. Car moins il est chauff\u00e9, plus l\u2019ail sauvage fera baisser la tension art\u00e9rielle&nbsp;: en ajouter quelques feuilles \u00e0 la salade s\u2019av\u00e8re habile. Et comme son cousin \u00abcivilis\u00e9\u00bb, il facilite la digestion.<br \/> Seul d\u00e9tail g\u00eanant, au d\u00e9but de sa pousse, en for\u00eat, l\u2019ail des ours peut \u00eatre confondu avec le muguet de mai ou le colchique, deux autres liliac\u00e9es hautement v\u00e9n\u00e9neux. Mais il suffit de presser entre ses doigts la verte herbe pour v\u00e9rifier qu\u2019elle sent l\u2019ail. D\u00e8s que la plante fleurit, plus de confusion possible&nbsp;: quoique blancs, les p\u00e9tales en boule n\u2019ont rien \u00e0 voir avec les clochettes du muguet.
