Etablie en Toscane, la journaliste am\u00e9ricaine s\u2019extasie de ces artichauts&nbsp;: \u00abLes Italiens semblent avoir acquis des go\u00fbts bien plus nombreux que les n\u00f4tres\u00bb. Un \u00abc\u0153ur d\u2019artichaut\u00bb, exquis \u00e0 manger, mais aussi volage \u00e0 effeuiller comme p\u00e9tales qu\u2019on arrache un \u00e0 un\u2026<br \/> Riches en prot\u00e9ines, vitamines et fibres, bons pour le foie fatigu\u00e9, les artichauts sont exquis crus. Mais les meilleurs sont \u00e0 venir. Ceux qui ont le plus l\u2019air de la famille, celle des chardons, avec leurs grosses \u00e9pines. Incomparables de tendret\u00e9, ils poussent en Sardaigne, co\u00fbteront tr\u00e8s cher cette ann\u00e9e \u2014 foi de mara\u00eecher&nbsp;! \u2014 et imposent d\u2019\u00eatre servis en \u00abcarpaccio\u00bb&nbsp;: des feuilles, les bract\u00e9es, vert tendre, qu\u2019on peut arroser de quelques gouttes de jus de citron pour \u00e9viter qu\u2019elles noircissent, juste soulign\u00e9es d\u2019une excellente huile d\u2019olive, avec quelques \u00e9cailles d\u2019un \u00abParmigiano Reggiano\u00bb.
