Cette ann\u00e9e, la r\u00e9colte a quinze jours de retard. D\u00e8s l\u2019hiver, on bute le terrain limoneux, en monticules r\u00e9guliers. Ensuite, d\u2019avril \u00e0 d\u00e9but juin, il faut passer entre ces lignes et guetter, chaque matin, la moindre faille dans la terre, signe qu\u2019une asperge est alors pr\u00eate \u00e0 sortir sa t\u00eate. On l\u2019extrait \u00e0 l\u2019aide d\u2019une gouge, puis on la lave et il faudra aussi la peler, avant de la cuire.<br \/> Mais je vous entends d\u00e9j\u00e0: quelle diff\u00e9rence entre les asperges vertes, blanches ou violettes&nbsp;? C\u2019est la m\u00eame plante, r\u00e9colt\u00e9e de surcro\u00eet \u00e0 la m\u00eame p\u00e9riode. La verte produit sa chlorophylle gr\u00e2ce \u00e0 la lumi\u00e8re et s\u2019\u00e9l\u00e8ve \u00e0 l\u2019air libre, tandis que la blanche ne conna\u00eet qu\u2019une vie souterraine. Et quand cette blanche est expos\u00e9e \u00e0 la lumi\u00e8re, sa t\u00eate vire au violet.<br \/> Tout cela, je l\u2019ai appris chez Eric Cheseaux, \u00e0 Saillon. Si le Valais a livr\u00e9, dans les ann\u00e9es 1960, jusqu\u2019\u00e0 600 tonnes de blanches, la plaine du Rh\u00f4ne n\u2019en r\u00e9colte plus que le dixi\u00e8me (mais reste le premier producteur suisse).&nbsp; Ses 25 tonnes annuelles autorisent Saillon \u00e0 se pr\u00e9valoir du titre de \u00abCit\u00e9 de l\u2019asperge\u00bb. Il n\u2019y a pas de meilleur moyen de s\u2019approvisionner en asperges que de se rendre sur place, fra\u00eecheur oblige. La tige indig\u00e8ne reste rare&nbsp;: une seule asperge sur vingt consomm\u00e9e en Suisse provient du pays et les restaurateurs (sept \u00e0 Saillon&nbsp;!) en sont friands: \u00abMes asperges sont livr\u00e9es \u00e0 10 h. 30 et mang\u00e9es \u00e0 13 h.\u00bb, explique Eric Cheseaux, d\u2019abord viticulteur du domaine de Corbassi\u00e8re, un peu mara\u00eecher et dernier converti \u00e0 l\u2019asperge, il y a trois ans. <\/p>\n<p> <span style=\"font-weight: bold;\">Fournisseurs<\/span><br \/> Sept producteurs font de la vente directe \u00e0 Saillon (VS).
