Le Fribourgeois Roland Python vient de mettre sur le march\u00e9 une \u00abtomme du berger\u00bb. Epais de 3 cm, le disque \u00e0 la cro\u00fbte immacul\u00e9e p\u00e8se environ 700 grammes. Moins d\u2019un kilo de moelleux, qui va du tendre au coulant, pour une premi\u00e8re en la mati\u00e8re. <br \/> Ce berger-fromager \u00e9l\u00e8ve depuis un quart de si\u00e8cle un troupeau de brebis laiti\u00e8res. Plus de cent-cinquante Lacaune blanches qui p\u00e2turent \u00e0 sati\u00e9t\u00e9 dans le Gibloux. Jusqu\u2019ici, leur lait fermentait en yoghourts savoureux. Mais Roland Python a voulu \u00e9toffer son offre. D\u2019o\u00f9 l\u2019id\u00e9e de cr\u00e9er un fromage dont l\u2019ingr\u00e9dient de base est \u00abdu lait de brebis cru et non standardis\u00e9\u00bb. Voil\u00e0 qui sous-entend une variation dans la texture du fromage et son go\u00fbt selon les saisons.<br \/> Cette tomme \u00e0 p\u00e2te molle, moul\u00e9e \u00e0 la louche, \u00e0 la cro\u00fbte fleurie, ressemble \u00e0 un brie, pour prendre une r\u00e9f\u00e9rence&nbsp;\u00abvache\u00bb connue de tous. Elle est affin\u00e9e une dizaine de jours chez le producteur. Ensuite, elle m\u00fbrit. \u00abMon fromage est parfait juste fondant sous la cro\u00fbte et moelleux \u00e0 c\u0153ur. Quand il coule, il faut le manger&nbsp;!\u00bb, souligne le producteur. <br \/> S\u2019il ne vend pas lui-m\u00eame sa \u00abtomme du berger\u00bb, Roland Python va la proposer \u00e0 son r\u00e9seau de magasins de Suisse romande. D\u2019embl\u00e9e, le fromager Andr\u00e9 Macheret, qui tient boutiques \u00e0 Vevey, Villeneuve et Lausanne, o\u00f9 il fait le march\u00e9 de la Riponne, a \u00e9t\u00e9 s\u00e9duit et le vend 4,80 fr. les 100 g.
